“The liquid smoke is my secret weapon in this marinade. Feel free to add other spices – cloves and star anise also work really well – but remember not to salt your marinade, as this could dehydrate the meat. No one loves a dried-out chop!”

smoked Spanish paprika 2 T, toasted
coriander seeds 1 T, toasted and ground
garlic flakes 1 T, toasted
brown sugar 50 g
tomato purée ½ cup
apple cider vinegar 1 T
Worcester sauce 2 t
Woolworths Lazy Kettle liquid smoke 1 t
fresh thyme 10 g
