TUSCAN TASTES
Tuscans are sometimes called (bean-eaters), thanks to the wealth of bean dishes in their cuisine. Think fava beans with pecorino, (beans cooked in a wine jar in the fire) or – “cooked water” – a humble soup made with veg, beans, spring water, and sometimes eggs.
