CHRISTMAS KITCHEN CRACKERS!

WHOLEMEAL HONEY CARROT CAKE

A tad healthier thanks to wholemeal flour and oh so delicious! This cake is sure to please everyone who is lucky enough to get a slice! You could even jazz up the decorations to make it a real festive table treat.

SERVES 8

Preparation time: 30 minutes
Cooking time: 40 minutes

■ 85g/3oz self-raising wholemeal flour
■ 85g/3oz self-raising plain white flour
■ 100g/3½oz soft brown sugar
■ 1 tsp baking powder
■ 3 medium free-range eggs
■ 125ml/4fl oz sunflower oil
■ 2 tbsp runny honey
■ 3 carrots, grated
■ 50g/1½oz sunflower seeds
■ 1 orange, juice of

FOR THE ICING:

■ 200g/7oz cream cheese
■ 2 tbsp runny honey
■ 1 orange, zest of

1. Pre-heat the oven to 180C/160 fan/ gas 4. Grease and line a 20cm (8in) round cake tin with baking parchment.
