MAKE A SUMMER CORDIAL

RHUBARB CORDIAL

Nothing beats the colour of rhubarb when it comes to cordials! Its vibrant pink is a true delight to serve on a summer’s day. Make sure to use organic or unsprayed citrus fruit when making cordials.

Makes approximately 600ml (1 pint)

Preparation time: 20 minutes

Cooking time: 20 minutes

■ 300g/10oz caster sugar■ 1 organic orange, zest and juice of■ 1 organic lemon, zest and juice of■ 450g/14oz rhubarb, chopped■ 1 thumb-size piece of ginger, peeled
