Vegan Cappuccino Choc Mousse with Sweet Cashew Cream

A wonderful dessert for a dinner party. The coffee hit will keep you talking long into the night!

Serves: 6

Choc Mousse

650g silken tofu, drained
¾ cup cacao powder, plus extra to dust
1 cup fresh medjool dates, pitted
1 cup non-dairy milk
4 tsp instant coffee

Sweet Cashew Cream

1 cup cashew nuts, soaked in water overnight, then drained
3 tbsp maple syrup
1 cup water

Place all choc mousse ingredients in high-speed blender and puree to smooth mousse.

Pour mousse into 6 small glasses and place in fridge for 1 hour to chill.

To make sweet cashew cream, place all ingredients in high-speed blender and blend to thick cream.

Top mousse with cashew cream and a dusting of cacao powder, and serve.

Hazelnut Coffee Cakes

Coffee and hazelnut is the perfect flavour combination. Hazelnuts are rich in mono-unsaturated fatty acids, which help reduce the risk of heart disease. You’ll find this type of fatty acid in macadamia nuts as well as avocados.

2 tbsp ground organic coffee beans1 cup boiling water300g dry-roasted hazelnuts160g coconut palm sugar150g brown-rice flour60g tapioca flour 2 tbsp coconut flour1 tsp baking powderPinch sea salt2 eggs½ cup olive oil
