A JOY OF SUMMER

It is with great anticipation that I await the first, finger-sized fruits of courgettes in early summer. They are sweet and crunchy, perfect to eat fresh from the plant or chopped into chunks and tossed with mint, lemon and olive oil for a speedy and delicious side salad. Adding feta and peas bulks it out into a great summer salad.
