OH SO SWEET AND OH SO SPICY!

APPLE & LOGANBERRIES MUESLI CRUMBLE

Loganberries are a hybrid variety and a prolific cropper that will no doubt give you a glut to use up. Freshly picked berries can always be frozen for later use in the season or, as here, popped into a tasty pudding.

Preparation time: 25 minutes Cooking time: 30 minutes

SERVES 4

FILLING

■ 4 cooking apples
■ 100g/3½oz loganberries
■ 50g/1½oz caster sugar

CRUMBLE

■ 50g/1½oz spelt flour
■ 75g/2½oz good quality muesli
■ 50g/1½oz unsalted butter
■ 30g/1oz coconut sugar

1. Preheat the oven to 190C/375F/gas 5.

2. Peel and core the apples, then quarter and cut into chunks.

3. Put the apples into a saucepan together with the caster sugar and one tablespoon of water, then cook over a low heat for five minutes to soften slightly, stirring occasionally, then tip into a small ovenproof baking dish. Add the loganberries on top.
