Introduction
Quiche is considered as typically French dish. However, savoury custards in pastry were known in English cuisine at least as early as the fourteenth century. The classification of a classic quiche dish is a custard baked in pastry containing meat, fish or fruit. (Quiche has a pastry crust and a filling of eggs and milk or cream which, when baked, become a custard).
In this book you will find a selection of Quiche dishes which, would be made in rural farms and homesteads of the English counties. Enjoy the mixture of vegetarian, meat and fish quiches with accompaniments such as baked potatoes, chips or fries, salad, potato salad, coleslaw, pickles of your choice (piccalilli or sweet pickle) or on its own.
A typical summer farmhouse gathering or cricket match spread of family and friends would call for a spread of all the above plus pork pies, sausage rolls, variety of cheeses and cold meats.
Once you’ve sampled the recipes in this book, you’ll be able to experiment with your own ingredients. Add Mediterranean Spanish, Italian, Greek, Moroccan or Asian ingredients to the mix and taste the wonders of this versatile meal.
