    When I first started baking cakes I wanted to know what each ingredient did so I could create my own recipes, but I couldn't find all the information together in one place. I decided to find out for myself through a series of experiments. I used one basic cake recipe and made it over and over again substituting different ingredients and making notes of the results. Some of my cakes were great successes and others disasters, but I learned something from them all.

    I decided to do some additional research and put together everything I've learned to create a quick reference guide. This guide has lots of information, but I hope you will find it simple and easy to use. It is really useful to have around when you realize you have forgotten an ingredient and don’t know how to substitute for it. It's also a great starting
