Dr. Holly Fourchalk

Dr. Holly Fourchalk practiced as a registered therapist for 20 years. During that time she questioned the fact that the brain requires nutrients to create neurons, neurotransmitters, transport systems, to fuel processes and to eliminate toxins. If one’s brain doesn’t have the sufficient nutrients and capacity to detox, she surmised, then surely that would affect one’s capacity to think, feel and function. Always working with leading edge science, she continued her research of the mind and brain outside of the psychological parameters. When she went on to study Naturopathic Medicine, she found that there were various dysfunctions, disorders and depletions in the body known to cause psychological issues, including depression and anxiety. Transferring from Naturopathic Medicine to Doctor of Natural Medicine, she also finished her Ph.D in Nutrition and a Master’s Degree in Herbal Medicine. She went to India to study Ayurvedic Medicine and followed that with studies in German Homeopathy. She continues to expand her knowledge of ways to help people heal from today’s common ailments that allopathic medicine tends to simply manage. ABOUT THE AUTHOR

    ONE

    Why do we love chocolate?

Chocolate has a long history. Historically, chocolate was considered a food from the gods. It was used in rituals, for royalty, to protect warriors going into battle, and of course, as an aphrodisiac. The chocolate of the 1900’s became an entirely different food than chocolate of the ages.

Why has it been used so extensively, and why do we like it so much? Well, that probably has to do, in part, with how nutritious it is for the body.

Perhaps it truly is a food from the gods as it has a significant impact on everything in the body, including:

    - Autoimmune Disease

    - Bone Density

    - Brain function and both emotional and cognitive challenges

    - Diabetes

    - Gut and food absorption

    - Heart and cardiovascular disease

    - Inflammatory disease

    - Liver and detox

    - Skin and healthy hair and nails

    - Weight management

Throughout history, people have enjoyed fruit. Fruits are full of wonderful substances like polyphenols, anti-oxidants, vitamins, minerals, soluble and non-soluble fibers, and more. Chocolate, though not technically a fruit, is no exception.

But somehow chocolate is different. Why? It is a food that:

    - tastes great

    - feels great in the mouth

    - is an aphrodisiac

    - provides natural anti-depressants

    - provides endorphins

    - provides energy

    - is full of nutrients that the body requires

    It has to be different!

This book will explore the history of the chocolate plant; the development of the chocolate food; the detriments of chocolate and most importantly, the benefits of chocolate.

There is a wide distribution of choc-aholics around the world with Switzerland in the lead consuming about 19 pounds of chocolate per person per year, according to David Wolfe & Shazzie’s Naked Chocolate. Belgians, Dutch, Germans and Austrians fall in behind consuming about 14 pounds of chocolate per year. I have not read anywhere where Canadians and Americans fall on this scale but the Japanese fall way behind with about 3 pounds per person.

Our delight with chocolate has even provided the backdrop for several movies like, Willie Wonka and The Chocolate Factory (1971); Four and a Half Women a.k.a. Chocolate for Breakfast (1998); Chocolat (2000); Charlie & the Chocolate Factory (2005); Chocolate Lessons (2007); In Search of the Heart of Chocolate (2008); and more movies in languages other than English – yes, we do love our chocolate.
