    Introduction

    Getting my herb garden ready every year is one of my favorite things to do to help bring an official end to the winter months. I love working in the soil and breathing the life back into it. Even for an indoor garden, it is a ritualistic part of my spring cleaning method – repotting and trimming back overgrowth, maybe adding new decorative pots or experimenting with a new herb.

    Let’s start out by clearly defining what an herb really is. It is a plant that can be used as a whole or in part as an ingredient to add flavor or fragrance, or can be used for health benefits as medicine.

    You can use them as a big part of the meal, maybe rubbing rosemary all over a chicken, or you can add them more subtly by mixing them with butters and spreads. You can make potpourri, add scent to bath water, or make scented candles.

    Also, herbs are common traditional ingredients in folk medicine. More than 25% of modern drugs contain plant extracts as their active ingredients, and more are being discovered and included all the time (Evans, et al.). So, not only do they smell and taste great but are wonderful for stimulating the body.

    There is a slight difference between an herb and a spice. The two are often confused, so we should make it clear early on. Herbs are defined as a plant that does not create woody tissues (so not trees), and most of them have some parts that can be turned into medicine, generally the roots, flowers, etc. They are also generally grown in temperate regions. Spices on the other hand come from tropical areas, they have more dramatic flavor, and they are derived from seeds, roots, barks, or fruits of other plants.

    An example of the difference is the coriander plant. The leaves are known as the herb Chinese parsley or cilantro, while the brown seed from the plant is the spice coriander (Bell). So, in sum, the herbs are the leafy bits up top, and spices are made from the hard pieces of the plant and have much more pungent flavor.

    Here is another example. Pepper can be added to food to make it taste good, and it certainly has a strong smell...does that make it an herb, too? Nope! Pepper is a
