The slow carb diet was devised by Tim Ferris and focussed around eliminating grains, sugar, fruit and dairy and therefore avoiding unhealthy sugars in all forms. His recipes all feature meat and fish but it is possible to follow most of his basic principle but not eat meat and fish. This book has a selection of meal ideas and recipes which include his riles but without meat or fish. Some contain eggs, but most are suitable for vegans as well as vegetarians.

    Introduction

    Many of us know about the benefits of a low carbohydrate diet. There have been many writers who have praised the benefits of reducing sugars in the diet both in the refined form and within other high carbohydrate foods such as those containing grains or more complex sugars. Many people experience weight loss and improved health from undergoing this type of dietary change.

    Many people have also praised the approach of Tim Ferriss. He has used a low carbohydrate approach with a lot of success, but he has a slightly different take on the diet. His ‘slow carb’ plan includes eating pulses or legumes with meals. He finds that these complex carbohydrates, release energy slowly between meals making the need for snacking reduced and helping keep up energy levels. Many people agree that this has helped them.

    The only problem with this ‘slow carb’ plan as well as the rest of the low carb / paleo diets is that they are heavy meat and fish based. Although these are great sources of energy, healthy fat and protein, there are people who do not want to eat them. This could be because they do not like the taste, because they find they do not suit them or they feel that eating animals is cruel and against their moral standards.

    This is why I had the idea to write this book. I felt there was a gap in the market for a book which had recipes that were not only slow carb based but also suitable for vegetarians. Some of the ideas are quite basic meal plans and others have more complicated recipes.

    Time Ferriss does not use much dairy on his slow carb diet except on cheat days. I have therefore left it out as well. However, with the lack of meat and fish, you may feel that you want to
