Although produce selections can be scant this time of year, take advantage of the squash, cabbage, sweet potatoes, and other savory vegetables. Try these 40 recipes and remember, spring is coming!

    No-Crust Spinach Quiche

    2 cups packed fresh baby spinach

    2 teaspoons oil

    2 teaspoons garlic, minced

    1/2 cup onion, chopped

    1/2 cup mushrooms, chopped

    1 1/3 cups ricotta cheese

    1/3 cup shredded cheddar cheese

    2 tablespoons shredded parmesan cheese

    2 eggs

    2 tablespoons fresh dill, chopped

    1 teaspoon Dijon mustard

    Dash of salt and pepper

    Preheat the oven to 350 degrees F.

    Thoroughly wash the spinach and place it in a large saucepan over high heat. Wilt the spinach for approximately 3 minutes. Remove from heat, drain, and chop the spinach. Set aside.

    Heat the oil in a large pan over medium heat. Cook the garlic, onion, and mushrooms until softened. Remove from heat. Stir in the remaining ingredients. Mix well.

    Pour mixture into a greased 8-inch springform pan. Bake in preheated oven for 25-35 minutes. Serve warm.

    Pumpkin Pancakes

    1/2 cup whole-wheat flour

    1/3 cup all purpose flour

    1/4 cup oats

    3/4 teaspoon baking powder

    1/4 teaspoon baking soda

    2 teaspoon cream of tartar

    1/2 teaspoon salt

    1 teaspoon cinnamon

    1/2 teaspoon nutmeg

    1 tablespoon brown sugar

    1/3 cup pumpkin

    2 tablespoons oil

    1 1/4 cup milk

    1 egg, beaten

    Stir together the dry ingredients. Whisk in the pumpkin, oil, milk, and egg to the bowl and stir until combined.
