    A Note on Calories

    Calories can vary greatly in any recipe depending on what you use or substitute. Everyone’s taste is different and I have suggested some substitutions in some of them. I have chosen recipes that are low in calories, easy to make and still taste great. My advice would be to not worry too much about the calories. Instead make sure the food you eat is healthy and not something that will clog the arteries and add pounds. Avoid foods that are high in fat content and/or high in sugar as those are the foods that will do the most harm to your waste line. I have included calories in the recipes only as a rough guide. Eating the right blend of healthy foods is far more important than simply counting calories. For our purposes here calories were estimated using various online calorie counters. The numbers should not be construed as exact values and used for comparison purposes only.

    French Toast

    French toast is one of my favorite, quick and easy to make breakfasts. Everyone in the family loves French toast. You can never go wrong with this for breakfast.

    Ingredients

    1/2 cup egg substitute

    3 egg whites

    Note: you can substitute 2 small or medium eggs for the above if you prefer real eggs over an egg substitute

    1/3 cup skim milk or 1/3 cup nonfat milk

    1 1/2 teaspoons ground cinnamon

    1 teaspoon vanilla

    4 slices whole grain bread

    3 tablespoons syrup, any favor of your choice

    1/2 cup fresh, seasonal berries

    Preparation

    In a medium shallow bowl, thoroughly mix the eggs, milk, cinnamon, and vanilla
