A vegetarian, by definition, consumes no meat, poultry or fish. Nonetheless, vegetarian cuisine can be packed with nutrition and flavor enough for even the most devout carnivores.
Vegetarianism, as a blanket term, covers three related groups: vegan, lacto-vegetarian, and ovo-lacto-vegetarian. Vegans use no animal products at all, while lacto-vegetarians may include dairy products in their diet, and ovo-lacto-vegetarians allow both dairy and eggs.
This book contains 53 great recipes offering a deliciously varied selection of all three kinds of dishes (plus some gluten-free recipes, too). It includes appetizers and snacks, salads and side dishes, entrees and desserts. I hope you enjoy them all!

Appetizers & Snacks
Sunshine Salsa:
4 ripe nectarines, finely chopped
1 ripe pear, finely chopped
2 red bell peppers, seeded and finely chopped
3 tablespoons minced fresh chili peppers (mild or hot)
3 tablespoons minced onion
3 tablespoons lime or lemon juice

Stir all ingredients together; cover and refrigerate for an hour or more to let the flavors blend. Stir again before serving.
