Ellen Vincent was brought up in Ghana but now lives in the UK. She is interested in all things that are natural. Ellen has noticed that many of the cosmetics and treatments that are available in the West contain lots of artificial ingredients and are often based on oils and substances made from petro-chemicals. After comparing them with the kinds of things that she used in Ghana she has found that the petro-chemical based ones can cause irritations and bad reactions as well as not being as good as natural based products. She now extensively makes her own cosmetics and only uses the best natural ingredients that she can find.Back in the old country coconut oil use is widespread and is used in cooking as well as to make body creams. She uses virgin coconut oil to cook with and uses it as the base for many of her skin and hair creams and oils. Ellen now produces a range of natural cosmetics that she sells in her local area in the UK under the name of 'Natural Revelations'. She hopes that she will be able to introduce these to Ghana at some stage together with all of the books that she has written on natural healthy living.Dealing with the outside of your body is fine but, to make the most of the creams and oils that you apply, you need to make sure that the foods that you eat are also doing their job. She is a big fan of green smoothies and makes sure that she has these every day. She feels invigorated after drinking them. You should look out for Ellen's books on green smoothies which include a volume that just contains ideas for recipes. She has built up her vast collection of green smoothie recipes by experimentation and following good practice. In the UK she came across apple cider vinegar and has found that this too is very useful when it comes to treating your skin and keeping your body healthy. She was so amazed by the many uses that can be found for apple cider vinegar that she wrote a book all about it. This too will soon be available through Smashwords. If you want to find out about how using a range of natural ingredients can be so good for your body and health, then you really should read Ellen's books. These are available in both electronic formats and as paperbacks. She is hoping to produce a book specifically for the care of Black hair and skin and as a result you should watch out for this when it is actually published in the near future.

    Introduction

Hummus is popular throughout the world and is often also identified with healthy Mediterranean cuisine. It has a variation in spelling and can often also be referred to as houmous. Despite the differences in spelling these dips are exactly the same.

Despite the ingredients for hummus being few and the method of preparation relatively simple, actually getting the hummus to look and taste right is a bit of an art and quite difficult to do. As you prepare your hummus you need to take your time and think about what you are doing. There are some simple things that could make a difference to the success of your hummus. Cooking the chickpeas in the correct way for the recipe is a very important thing. You will get better results if you cook your own and use the cooking juices compared to using the canned version and water. Tahini has a tendency to separate out so you should make sure that you stir it well before use. Having the correct garnish can also make a lot of difference. You may need to search for some of the ingredients and make your own spice mixtures. When you are using food processors or blenders you will probably find that food processors will do a better job due to the fact that blenders may need extra liquid in the mix for the blades to get a grip on the ingredients. We have all had the situation where the blades of our blender whiz round but the ingredients just aren’t touched. Having said that, my blender seems to do a better job of pureeing the chickpeas than my food processor. When you use your food processor make sure that valuable ingredients such as garlic haven’t just been smeared up the sides of the processor jug and not combined with the rest of the ingredients. You may need to take time to scrape the ingredients on the side back down into the mix before continuing. Try to use ingredients at room temperature rather than straight from the refrigerator as they will mix together better. If you make a change to your method or ingredients make a note of what you have done, and in the end decide whether it has been an improvement or not. Try to change as few things as you can, at any one time, so that you know which change has actually affected the taste or consistency of your hummus. Above all, don’t be afraid the try out different things. You don’t have to slavishly follow the recipes given here. If you like more cumin in your hummus then you should make sure that you put it in. You are trying to impress your own taste buds after all.

Although hummus is traditionally made from chickpeas, there are many alternative versions using other ingredients. Chickpeas belong
