I would like to share with you a personal experience of mine before you begin reading the book. Twenty years ago I had gained some unwanted weight and sought to take it off quickly. I found a spa in St. George, Utah and booked a two week stay. The diet at the spa was made up of mostly fruits, vegetables and grains. In the two weeks I attended the spa I was offered a 3 ounce piece of chicken for dinner on one occasion. That was the extent of any meat at meal times at this place. The diet eliminated meat, salt, sugar, white flour, dairy and processed foods of any kind. If you became hungry in between meals you could get an apple or a plain baked potato that was kept in a warmer in the dining room.
There was a large pool where they offered water exercise classes, a gym with tread mills, bikes and weight machines and every day three distinctive hikes were offered with one of the instructors. A one mile hike was offered before breakfast and a five and 10 mile hike after breakfast. There were the normal spa offerings of yoga classes, massages, facials, etc. but I was on a mission to get rid of those unwanted pounds, nothing else.
As soon as I arrived at the spa I put my bathing suit on and went to the pool to swim a couple laps. The pool was inside a building of its own and was quite large. A woman in the pool when I entered immediately began talking about her experience at the spa. She said she had been there for four weeks and was having great results. She was slightly on the obese side but said she had lost twenty five pounds since arriving, (she had been there for four weeks) but more importantly that she had stopped taking her insulin shots, was no longer using an inhaler and had cut back on her high blood pressure medication. I was working as a registered nurse in a hospital at the time and my first thought after listening to her story was, what kind of a nut place had I just booked into for two weeks. I had never heard of any one on insulin and inhalers stopping them because they changed their diet and began a daily exercise program of just walking and swim classes. I had serious concerns about who the people running this spa were and what their back grounds were.
At lunch one day after having been at the spa for a week, two couples who were in their late sixties, but appeared to be in good shape, asked if they could join me at my table. I said yes and one of the men began to explain why they arrived late for lunch. He had
