Samantha Michaels was born in 1973 in the small town of Abington, PA and was raised and still lives in Hatboro, PA (both suburbs of Philadelphia).  She is married to her high school sweetheart and they have a rescue dog, a beautiful Black Lab named Holly. When she's’not writing or working at her full-time job, she enjoys watching her Philly sports team (hopefully) win, listening to heavy metal/hard rock music, Texas Hold Em, reading, and spending time with friends and family. Her love of reading began at a young age, thanks to her mother and Sesame Street.  Her mom read to her constantly, and by three years old, she was reading on her own, and hasn’t stopped.  This eventually turned into a love of writing.  She was writing for herself and then for a small group of friends, one of whom told her she should be writing books.  She took her friends advice and has since published several romance books with plenty more on the way.

    Chapter 1 – Egg Like Dishes

    No Eggs Eggs Benedict

    Preparation

    Place spinach in a small pan and sauté in the olive oil. Set aside Next, fry the tofu in the same pan with the left over olive oil and add the soy sauce. While frying the tofu, preheat the oven to 300 degrees Fahrenheit.

    Place all of the other ingredients in a sauce pan and heat on the stove to create the Hollandaise sauce.

    Now, just layer by starting with ½ of the prepared English muffin, next the spinach, then the faux meat, and last the tofu, top with the other half of the English muffin. Place in the oven for around 7 minutes. Take out of the oven and place on plate. Pour the sauce over the creation.  Makes 2 servings.

    Tofu Scramble

    Preparation

    Cut the tofu into one inch cubes and then crumble a bit. Sauté the pepper, onion, and tofu in the oil for around 4 minutes stirring often. Next, add the rest of the ingredients, lower the heat to medium and cook for another 6 minutes. Stir often and add more olive oil as needed. Serves four.

    Tofu Scramble with Cheese

    Preparation:

    Sauté the tofu along with the green onions and bell pepper in the olive oil until it is slightly browned. Now, add the rest of the ingredients except the cheese. Stir thoroughly and cook for another 7 minutes until it is hot. Serve once you top with cheddar cheese. Serves 2 to 3.

    Vegan Omelet

    Preparation

    Put all the ingredients in a blender. Blend until smooth. Cook all of the toppings until desired tenderness. 

    Heat the olive oil in a large pan on medium high until drops of water dance. Place ¼ of the mixture into the pan and cook until it is about half way finished cooking. You can tell as it begins to dry out a bit. Add the toppings of your choice and spread over the top of the mixture evenly. Cover and cook until the bottom is golden brown. Repeat until you have four omelets.

    Spinach Quiche

    Preparation

    Preheat oven to 400 degrees Fahrenheit. Prepare your cookie sheet by lining with foil.

    In a large mixing bowl, combine milk and mayo until smooth. Mix in the egg substitutes. In the pie shell place the spinach first, then the cheese, and last the onion making layers. When finished pour in the egg mixture. Put the quiche on the cookie sheet and cover with foil. Bake for 45 minutes. Remove the foil and bake another 12 minutes until the top is golden brown and the filling is hard set.

    Breakfast Casserole

    Preparation

    Oil an 8 x 11 ½ baking dish. Cut the toast into cube and place in the baking dish evenly. Break ½ of the sausage into pieces and place over the bread. Using a mixer or blender add the tofu, tahini, milk, yeast, onion granules, lemon juice, syrup, and seasonings. When smooth pour into the baking dish. Add remaining sausage. Place plastic wrap over the dish and freeze for two hours. Preheat oven to 325 degrees Fahrenheit. Bake until golden brown around 50 minutes. Serves 12. 

    Chapter 2 – Pancakes/Waffles/Crepes

    Vegan Strawberry Rhubarb Pancakes

    Preparation

    Using a whisk, mix milk, rhubarb, and strawberries and let the mixture sit for about 10 minutes. Blend all the dry ingredients together in a separate bowl. Using the whisk add the oil to the milk mixture, and then add to the bowl with the flour mixture. Heat your griddle or non-stick pan. The pan is ready when you flick water into the pan and it dances. Drop around 1/3 cup of the batter in the pan, turn when the edges are dry and cook the other side for around two minutes. Remove from pan. Makes 6 pancakes.
