    Chapter One

    My definition of man is a cooking animal. The beasts have memory, judgment, and the faculties and passions of our minds in a certain degree; but no beast is a cook. - James Boswell

    I have heard it said by many of the world's most famous chefs that make appearances on the food networks and those who have their own kitchen rescue series on network television that you should never cook with mic, meaning a microwave oven.

    Those who earn millions of dollars and have spent decades learning how to become master chefs can say this with a straight face, but to the average person they sound crazy. Almost every home has a microwave in it and preparing at least a quarter of our meals would be difficult and time consuming without one.

    The microwave is a tool like any other. Most of us use it for prepared frozen meals and of course popcorn. Also to reheat takeout meals and left over's. The weakness of the microwave is the act of actually preparing meals from scratch with one. With this book I hope to change that option.

    I am not going to give you a massive book that is filled with hundreds of recipes. I have never liked those books. Those books are like walking into a restaurant, sitting down and being handed an eight page menu. Too many choices mean too many hard choices.

    Should I order this?

    Should I pair it with that?

    Why does this restaurant have an entire page dedicated to dip?

    Whose bright idea was it to divide warm desserts from cold desserts and give them each their own page?

    Menus like that and books like that are more than most people can handle so I am going to keep this one relatively short and to the point.

    You can cook quality meals with a microwave that do not come from a box in the frozen foods isle.

    You can cook quality meals with a microwave from scratch.

    Understand that not every recipe will come with a picture. I left some out because I find that pictures can intimidate. If the end result does not look exactly like the picture then it is a failure and nothing could be further from the truth. This is not master chef where you will be judged on appearances. It is about taste and mastering simple recipes. Focus on taste rather than the look of the finish product and I promise you that you will be happy.
