What images and flavors come to your mind when you think about Chinese food? If you ask five different people, you may get five different answers. That is because Chinese cooking is influenced by the distinct geographic regions and provinces in China.

There are 14 general areas comprised of eight provinces and six other regions. The eight provinces are: Sichuan, Fujian, Shandong, Hunan, Cantonese, Zhejiang, Anhui, and Jiangsu. Among these, Sichuan and Cantonese are probably what most of the non-Chinese population have experienced because they make up a large portion of the Chinese restaurants in western cities.

The other six regional Chinese cuisines are: Northern, Mongolian, Tibetan, Xinjiang Muslim, Southern Minority, and Taiwanese. Mongolian Beef is one of the most popular dishes in Chinese restaurants.

The different food styles are influenced by the regional farm life, climate, religion and minority culture. The regions of Mongolia and Tibet are largely pastoral. So, you will find many dishes based on dairy products, beef and lamb.

Southern Mongolia is mountainous, so that cuisine includes more game meat.
Taiwan is somewhat isolated from the rest of China geographically and politically.
