    What is Canning?

    Simply put, canning is a method of preserving cooked food to increase its shelf-life – sometimes by months or even years. You may be wondering how placing food in a glass jar can keep it fresh for a whole year. The process is actually quite simple – by cooking the food before canning, you effectively kill any bacteria that may be present. Then, by sealing the food in an airtight jar, you can prevent bacteria from entering which might cause the food to spoil. With proper preparation and a tight seal, canned foods can remain fresh for 12 months (or longer, in some cases).

    Popular methods for canning include:

    - water bath canning

    - steam pressure canning

    - canning for the freezer

    Though there are several different ways to can and preserve food, the easiest method to employ is water bath canning. For this reason, and because most foods can be safely preserved using this method, the recipes in this book will utilize water bath canning. Once you have mastered this method of canning you can look into trying other methods such as steam pressure canning.
