Crockpot Beef Bourguignon
Everyone loves this dish and I think you will too.
Ingredients
1 cup red wine
2 tablespoons oil
1 large onion, peeled and sliced
1/2 teaspoon thyme
2 tablespoons parsley -- chopped
1 bay leaf
1/4 teaspoon pepper
2 pounds stewing beef, cut into 1 1/2-inch cubes
3 slices of bacon, diced
12 small white onions
1/2 pound sliced mushrooms
2 cloves garlic, minced
1 teaspoon salt
Combine first seven ingredients, mix well, then add the beef. Marinate for at least 3 hours or overnight in the fridge.
Drain the meat and reserve the marinade. In a skillet, saute the bacon and then remove it to a plate.
Brown the meat in bacon fat.
Combine the beef, bacon, vegetables and seasonings in the Crock Pot.
Pour over enough marinade to cover. Cook on low 8-10 hours.
Serves 6-8.

    If like me, you’re in a hurry every morning but still want to give your family something substantial to start the day, I always rely on these quick and easy breakfasts.

    Fiesta Eggs

    Grab a few pantry staple favorites, ten minutes of your time, and you have breakfast. Serve this with hash browns or cubed pan roasted potatoes, more salsa, and some sour cream.

    Ingredients

    1 15 ounce can chili beans

    4 slices of bread, toasted

    1/3 cup salsa

    1/3 cup shredded cheese

    4 eggs

    Pre-heat oven to 375 degrees.

    Spray four ramekin dishes with non-stick cooking spray and place them on a baking sheet.

    Break up the pieces of toasted bread and place at the bottom of each ramekin dish.

    Spoon the chili beans onto the toast.

    Break an egg on top of the beans.

    Spoon a couple of tablespoons of salsa on each egg.

    Sprinkle a couple of tablespoons of cheese on top. (Reserve some for later).

    Bake in the oven for about ten minutes or until the eggs are set.

    Remove and sprinkle on the remaining cheese.

    Serve immediately.

    Serves 4.

    Cheese Puff

    This recipe is like a soufflé but a whole lot easier to make. I think just about anyone in the family will enjoy it, young and old alike. Best thing is it looks more impressive than it actually is and you can fool people into thinking it took you hours to make. This also makes an impressive dish at a brunch buffet.

    Ingredients

    ¼ cup cottage cheese

    5 large eggs

    ½ teaspoon baking powder

    ¼ cup all-purpose flour

    ¼ teaspoon salt

    2 cups shredded sharp cheddar cheese

    4 tablespoons unsalted butter, melted

    Pre-heat oven to 375 degrees. Coat a large baking dish or soufflé dish with non-stick cooking spray and set aside.

    In a large bowl, add all the ingredients and stir together. Pour into the prepared dish and bake for 20 minutes or until the mixture is set.

    Serve immediately.

    Serves 4.

    Quick Egg and Potato Microwave Casserole

    Nothing like the microwave to make a quick and hearty breakfast.

    Ingredients

    1 large potato, peeled and diced

    1/2 cup peeled and chopped onion

    1/2 cup chopped and seeded green pepper

    6 eggs

    1/3 cup milk

    Good pinch of salt, pepper and garlic powder

    In a large microwave safe casserole dish, combine potato, onion and green pepper. Cover loosely with plastic wrap; cook on high 7 to 9 minutes or until potatoes are tender. Mix together remaining ingredients. Pour over potatoes. Loosely cover with cling wrap; cook on High 4 to 6 minutes or until eggs are just set as desired, stirring twice. Let stand 2 minutes.

    Makes 4 servings.
