    Baked Brunch Omelet

    Ingredients

    1/2 (1 pound) loaf white bread, cut into cubes

    1 1/2 pounds Cheddar cheese, shredded

    1 cup cubed cooked ham

    8 eggs

    2 cups milk 1 pinch salt

    1 dash hot pepper sauce, or to taste

    1/4 cup chopped green onion

    Directions

    Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13 inch baking pan.

    Place half of the bread cubes on bottom of baking pan. Sprinkle with half of the ham and then half of the cheese; repeat.

    In a large bowl, beat together eggs, milk, salt, hot sauce and green onions. Pour egg mixture into pan.

    Place pan on top of a baking sheet with a rim and place in oven. Pour water into baking sheet and bake for 60 minutes, or until eggs have set.

    Ingredients

    1 (.25 ounce) package active dry yeast

    1/4 cup warm milk (110 degrees F/45 degrees C)

    3 egg yolks

    2 3/4 cups warm milk (110 degrees F/45 degrees C)

    3/4 cup butter, melted and cooled to lukewarm

    1/2 cup white sugar

    1 1/2 teaspoons salt

    2 teaspoons vanilla extract

    4 cups all-purpose flour

    3 egg whites

    Directions

    In a small bowl, dissolve yeast in 1/4 cup warm milk.

    Let stand until creamy, about 10 minutes.

    In a large bowl, whisk together the egg yolks, 1/4 cup of the warm milk and the melted butter.

    Stir in the yeast mixture, sugar, salt and vanilla.

    Stir in the remaining 2 1/2 cups milk alternately with the flour, ending with the flour.

    Beat the egg whites until they form soft peaks; fold into the batter.

    Cover the bowl tightly with plastic wrap.

    Let rise in a warm place until doubled in volume, about 1 hour.

    Preheat the waffle iron.

    Brush with oil and spoon about 1/2 cup (or as recommended by manufacturer) onto center of iron.

    Close the lid and bake until it stops steaming and the waffle is golden brown.

    Serve immediately or keep warm in 200 degree oven.

    Ingredients

    1 cup warm milk (110 degrees F/45 degrees C)

    2 eggs, room temperature

    1/3 cup margarine, melted

    4 1/2 cups bread flour

    1 teaspoon salt

    1/2 cup white sugar

    2 1/2 teaspoons bread machine yeast

    1 cup brown sugar, packed

    2 1/2 tablespoons ground cinnamon

    1/3 cup butter, softened

    1 (3 ounce) package cream cheese, softened

    1/4 cup butter, softened

    1 1/2 cups confectioners' sugar

    1/2 teaspoon vanilla extract

    1/8 teaspoon salt

    Directions

    Place ingredients in the pan of the bread machine in the order recommended by the manufacturer.

    Select dough cycle; press Start.

    After the dough has doubled in size turn it out onto a lightly floured surface, cover and let rest for 10 minutes.

    In a small bowl, combine brown sugar and cinnamon.

    Roll dough into a 16x21-inch rectangle.

    Spread dough with 1/3 cup butter and sprinkle evenly with sugar/cinnamon mixture.

    Roll up dough and cut into 12 rolls.

    Place rolls in a lightly greased 9x13 inch baking pan.

    Cover and let rise until nearly doubled, about 30 minutes. Meanwhile, preheat oven to 400 degrees F (200 degrees C).

    Bake rolls in preheated oven until golden brown, about 15 minutes.

    While rolls are baking, beat together cream cheese, 1/4 cup butter, confectioners' sugar, vanilla extract and salt.

    Spread frosting on warm rolls before serving.
