    Cumin – comes in powdered or seed form, cumin offers a really intense flavor that gives more depth to any Indian dish.

    Coriander – leaves, seeds and their roots are used in different types of Indian dishes. They can also be dry roasted, blended with other spices and herbs and of course used as added greenery and flavor to stews and sautés.

    Mace and Nutmeg – mace is the membrane that protects the actual nutmeg. They are used to add warmth and aroma in authentic Indian dishes such as massaman curry.

    Mustard Seeds – these seeds offer really intense flavors, especially when pan-fried or roasted before grinding. Mustard seeds are always part of curry blends.
