The following are the most common and most essential spices that Indian professional and home cooks use when cooking their favorite dishes.
Cardamom – there are essentially 2 types of cardamom pods used in Indian cooking, the green and the black ones. They are often used in masalas, curry mixes and even in desserts. They are either dry roasted to ground.
Cinnamon and Casia Barks – for those who are looking for a less expensive substitute to cinnamon, Casia barks are the best choice. They offer similar flavors which are perfect for masalas, curries and even desserts as well. They come in powdered and stick forms.
