Introduction
Many cooks, even those with years of experience, fear bread baking, but this culinary gift is one of the simplest but most rewarding tasks that can be performed in a kitchen. Fresh homemade bread is worth the little extra time and effort it may take to prepare this staple food. Once a cook makes that first loaf of white bread or that first pan of perfect rolls, they are hooked forever on making bread.
There are only four basic ingredients used in making bread: Flour, yeast (or leavening of some sort), salt and water. Depending on the type of bread being made, additional ingredients may be used, but the basics remain the same. In order to get the best bread results, it pays to understand a little about each of these ingredients.
Flour: The two most commonly used types of flour are all-purpose and self-rising. All-purpose flour is the preferred flour for most yeast breads while self-rising flour is used for biscuits and fruit
