Introduction
Quinoa has been declared as one of the most nutritious food items in the world. In fact, in the year 2013, the United Nations declared it the International Year of the Quinoa. Its unique composition makes it highly advantageous. It has low gluten content, making it more tolerable for gluten-conscious individuals. It has more protein content than any other rice variant, making it a complete source of protein. It has also high concentrations of a variety of vitamins such as Vitamin B, folate, iron, magnesium, Vitamin E and zinc. NASA itself will include quinoa for long distance space flights manned by human pilots.
Now that quinoa has gained the popularity it deserves; it comes to no surprise that recipes are being designed and developed to include quinoa as one of its main ingredients. In this chapter, you will learn recipes for:

Title: Mexican Ground Beef
Servings: 4
Ingredients:
1 cup quinoa
1 1/2 cup water
1 lb ground beef
15 oz tomatoes, diced
1/2 cup onion, chopped
1 tsp cumin
1 1/2 tsp chili powder
Directions:
Put pan over high heat, put beef and cook until brown
Add onion, remove fat, set aside
Clean and rinse quinoa
Pour quinoa, add chili powder, tomatoes and cumin with ground beef
Add water and allow to simmer without cover for 25 minutes
Serve
Title: Beef Taco
Servings: 4
Ingredients:
1 cup quinoa
3/4 lb ground beef
14 oz canned tomatoes, diced
1/2 cup onions, chopped
1 oz seasoning mix
1/2 cup Mexican cheese blend, shredded
1/4 tsp garlic salt
Directions:
Rinse and cook quinoa as per package directions, add salt, set aside
Put skillet over medium heat, add onions and beef, cook for 7 minutes while stirring
Add tomatoes, sprinkle with seasoning and pour water
Allow to boil and simmer for 5 minutes, keep stirring
Scoop quinoa mixture and divide into 4 bowl
Scoop beef mixture and layer over quinoa
Sprinkle with cheese
Serve
