    I came home at around 10 in the evening. It was a long day at work, I was tired, a bit grumpy and worse, very hungry. I could order out, but I did not have enough patience to wait, and I was sure at this time, I would be the last in the queue. I opened my fridge and of course, there was nothing in there that could satisfy my hunger pangs.

    I sat on the kitchen island and began to look around, trying to think of what I could possible whip together that would take the least amount of time but with the greatest amount of satisfaction. The oven was definitely out, no time to preheat. The stove was there, but that would mean a quick fry, which will not go well with my health choices. Then I saw my trust old microwave and a cupboard full of microwave-safe mugs.

    I heard of mug meals a few weeks ago, and I immediately shrugged it off as a version of lazy and low-quality cooking. I may not be a professional chef, but I made a promise to prepare only classic and traditional home cooked food. I only used the microwave to heat leftovers as far as I remember. Still, desperate times, like this one, called for desperate measures, like mug meals.

    After less than 5 minutes of putting all ingredients into the mug, no mixing bowls, no saucepans, and no large pots and after less than 2 minutes of cooking, the result was a perfect home cooked meal for one, filling, tasty and most importantly easy to make. I am glad I took the plunge and went for mug meals. I cannot wait to see how far I could bring my microwave and mug in terms of mug cooking.

    All my misconceptions and bias against mug meals were dispelled. I realized that I can have equally delicious, satisfying, and healthy meals as those prepared using my usual kitchen appliances as with the microwave. There is an added bonus too.

    Lately, I find myself with too many leftovers from recipes that yield at least four or more servings. Mug recipes are the best recipes for those days when you only need to cook for yourself. With mug recipes, you get the most out of your ingredients and out of your time. I was able to extend my week’s worth of grocery to almost two weeks with these recipes.

    I want to share with you the ease, fun, and joy of cooking mug recipes. If you are like me who find yourself tired after a long day’s work but still want to reward yourself with home cooked meals in the easiest way possible, then these recipes are for you. If you feel a bit apprehensive of cooking your first mug recipe, then I want to encourage you with trying just one of these recipes.
