Let me begin by admitting that the low carb diet has been one of the most challenging diets that I have ever chosen. It is tough controlling portions and choosing ingredients, but the rewards often make it all worthwhile. However, there was one downside that made it more difficult to stick to the diet. I often spend at least an hour in the kitchen working furiously over different sets of pans, different settings of the oven and different cuts, slices, and preparations of the ingredients.
The result of these challenges was a long episode of discouragement. After a long day at work, I dreaded having to come home with a table empty and with a kitchen waiting to be attended. More than once I resorted to foregoing cooking at home and just ordering out to get dinner over with. Sometimes resting and getting to bed early are more valuable than having to spend more time in the kitchen. I could not remember the times when I had chosen to forego the healthy dish to make way for longer hours in bed.
It was when I gained a few pounds that I decided to retake control of my health and use of time choices. I could not add more time in my day, but I can certainly cut back on the time spent in the kitchen cooking. I want to share with you that you can have the best of both worlds; you can prepare low carb dishes and still save on time.
After a few hits and misses, I finally came up with a list of my go-to dishes that are easy to prepare, low carb and most importantly for me, still flavorful. I want to show you that you no longer need to make an excuse of sacrificing the quality of your dishes because of lack of time. With just 30 minutes or less, you can cook low carb dishes.
