Foreword
For many people, eating healthy isn’t always easy. For years, I struggled with trying to figure out how to incorporate a healthy diet into my own busy lifestyle. Supermarkets make eating unhealthy frozen meals too easy. Between work, school, taking care of the kids, and responsibilities at home, I rarely found the time to cook a delicious but healthy meal.
I consider myself a relatively intelligent person, and I know that eating bad food isn’t good for me and ultimately makes me feel even worse. But I had enough stress in my life already without having to spend hours at the grocery store trying to find food that doesn’t contain artificial and harmful ingredients. It was just too easy to order takeout or pick up something quick, something I didn’t have to put any thought into making.
But then I saw an article that discussed the health benefits of quick and easy Mediterranean food. I decided to read it – little did I know that one simple article would change my life forever!
After our family’s first Mediterranean-style dinner, we were hooked. The kids actually wanted to eat their vegetables! (And that’s certainly not an easy feat in our household.) I am so thankful for the transformation that Mediterranean cooking has sparked in my family. My husband and my children don’t dread eating healthy food like they used to, and it leaves us all feeling full, unlike many traditional diets.
The Mediterranean style of cooking has also helped me become more conscious of how and where I buy my food. In a planet facing disasters caused by climate change, which is partially caused by the way we rear our meat, it’s important to decrease the impact of our individual carbon footprints. Instead of opting for mass-produced meat at the supermarket, I’ve decided to shop local and organic. Not only does this put more money into the local economy, which will go toward my kids’ schools, but it also reduces my intake of potentially cancerous and harmful chemicals, hormones, and other additives. When I buy tomatoes at the local farmer’s market, I know that I’m getting tomatoes and nothing else. That’s not so at the supermarket.
Mediterranean recipes make cooking easy, fun, healthy, and affordable. Not only do I eat better, but I feel better, too. Mediterranean food gives me everything I need – fruit, vegetables, lean meats packed with protein, and hearty whole grains. This helps me manage both my overall health in addition to my weight. And the best part? A glass of red wine with dinner is actually encouraged!
I’m so excited to share what I’ve learned with others in the hopes that it will encourage them to make a healthy change in their lives.
