    Vegetarian - Paula Smythe

Never underestimate the power of small changes!

I'm not sure how you found this book, or what made you interested to check it out further. Maybe you have a health problem and need to eat less meat. Maybe you want to lose some weight and thought vegetarian meals would be a good way to reach your goals. Maybe you're worried about the environmental impact of meat production. Or maybe you have a friend or family member who is a vegetarian, and you would like to cook something special for them.

Whatever your particular reason to look at this is, it's a great reason. And I want to congratulate you on it. It's your reason, your path. And as you walk it, you are leading by example.

When you're on your path, people notice. They'll wonder why there's a spring in your step lately. Or they'll notice that you lost weight. Or that the food you've brought to work lately looks and smells amazing.

Whether you want to go meatless one day a week, or try vegetarianism out for a month, or have committed to it fully, it all matters. It all adds up. Little hinges swing big doors, as the saying goes. One small change leads to another small change, and it all leads to a huge impact.

In writing this book, I wanted to help you reach your goals, and I also wanted to avoid getting in your way. There's nothing super fancy here. These are time tested, familiar recipes that can become go-to staples in your kitchen.

You are awesome, and I wish you success in all the goals you have.

French Onion Soup with Gruyere Toast

The classic soup minus the traditional beef broth. The addition of soy sauce adds enough body to the soup that you won't miss it.

The ultimate key to this is patience. You cannot rush the onions.

French Onion Soup with Gruyere Toast

    4 tablespoons butter

    6 large Vidalia onions, sliced

    1 bay leaf

1/2 teaspoon black pepper, freshly cracked

    1 quart vegetable broth

    2 tablespoons soy sauce
