    INTRODUCTION

    THAI TAKEOUT FOODS − AN OVERVIEW

    Thai cuisine is loved worldwide for its rich flavor and history. It is also the most unique and most sought after cuisines amongst all the Southeast Asian cuisines. Influenced by Chinese and Indian cuisines notwithstanding, Thai cuisine still manages to carve a unique identity of its own. Major ingredients of Thai cooking initially included aquatic animals, herbs and plants; but as Western and Eastern influence crept in, other ingredients such as large chunks of meat began to feature in their foods, together with their famous herbs and spices.

    Thai foods are known for being hot and spicy; but it is not all about spicy meals and chilies, (which was introduced to Thailand cooking by Portuguese missionaries in the 17th century). As a matter of fact, the guiding rule of Thai cooking is harmony. This is why it incorporates a mix of the five taste groups: salty, sour, spicy, sweet, and bitter. Whether in a rich Thai curry, spicy soup, appetizing salad, or sweet dessert, there must always be a balanced harmony of competing and complementing flavors to make it interestingly and excitingly rich.

    Besides chillies, herbs and spices such as, lemongrass, garlic, basil and mint are the heart of a meal. They provide an amazing array of mouthwatering and exotic tastes that make Thai cuisine so exceptional. Thais are adept at toning down foods with fresh herbs. Take the famous Thai curries for instance; it is spicy but will burn only for a short period of time, unlike other curries that will burn for longer. One reason for this is that Thais often use the very flavorful galangal root in their curries and soups.

    Among Thai’s staples are rice and vegetables, which are in plentiful supply in Thailand. Thais have also become extremely creative with these two seemingly bland foods, turning them into mouthwatering and irresistible meals. As a matter of fact, Thais know how to mix and match ingredients to bring out that perfect blend that makes it so Thai. Their wide range of dishes can be improved upon and adjusted to suit all palates.

    Today, there is no need to frequent four star hotels and restaurants in America to enjoy Thai foods prepared by foreign chefs; neither is it necessary to order takeouts from Thai eateries. You can make these dishes right from the comfort of your home. Simply follow the recipes in this cookbook to create delectable Thai dishes filled with fun and fiery flavors to enjoy with family and friends.     THAI COOKING METHODS

    Thai cooking is straightforward. Certain ingredients like chillies, ginger, Thai basil, shallots, lemon grass, soy sauce, coriander, onions, coconut cream and fish sauce are skillfully handled while cooking to bring out a balanced flavor in the end. Most dishes are prepared with very little oil and lightly-cooked ingredients in order to preserve their natural flavor and crunchiness.

    Thai cooking methods include:

    Stir-Frying:

    Stir-frying is a quick process of cooking food using a wok or a large skillet or pan. The wok must be hot before you add the cooking oil and the cooking oil should also heat up before you add other ingredients. Stir quickly with a spatula to allow the ingredients heat through. Since stir-frying is done quickly, make sure your ingredients are cut and prepared ahead of time before you heat up the wok to avoid overcooking or burning them due to distractions. Stir-fries dishes often turn out fresh, delicious, and nutritious.

    Stewing :

    In stewing, all the sweetness and nutritional goodness of the ingredients are retained in the stewing liquid. Even tougher cuts of meat can be softened by this cooking process. Stewing involves cutting the food ingredients into even pieces and dunking into enough liquid to completely cover. The pot is then covered and placed over low heat to cook slowly. The stewing liquid can be reduced or thickened into gravy. It can also be served whole as a side dish.

    Steaming:

    Steaming is a healthy method of cooking ingredients by the risen vapor from the boiling liquid below. This method retains most of the nutrients because the ingredients do not come in direct contact with the boiling liquid.  When steaming foods, place the ingredients in a heat-proof contain and then place over the boiling liquid. Tightly cover with a lid to ensure the steam remains in.

    Deep Frying :

    This method involves cooking food in deep oil. Deep-frying is done in a deep pan or wok and the oil must be plentiful to cover the food completely. Contain splattering by filing the oil half-way up the pan or wok. The temperature of the oil must be balanced (350°F). If it is too much, the food will burn; and if it isn’t hot enough, the food will be soak up all the oil and be greasy. Once the food is ready, remove with tongs and drain on paper towels.

    Grilling:

    To grill food, set the food above or below a heat source that includes an oven, hot coals/charcoal, stovetop or under the electric grill. In Thai cooking, meats are wrapped in aluminum foils or banana leaves. They could even be wrapped in both leaves and aluminum foil. The meats can also be exposed directly to the source of heat. To grill foods successfully, ensure the heat is well regulated to prevent burning or blackening the outside while the inside remains raw.

    COOKING TIPS & TRICKS

    Use Fresh Ingredients

    One of the secrets of great Thai cooking is using fresh ingredients. Fresh aromatic vegetables like garlic, ginger, onion, shallots, galangal and lemongrass are liberally used as a flavor base for many dishes. Thais aren’t so much into refrigerating; they would rather frequent food markets to get the freshest produce available. For fresh supply of Thai flavors, be prepared to make the journey to your nearest supplier at least two times a year.
