    Introduction

    Welcome to my one pot recipe cookbook.

    I have grouped together all my delicious one pot recipes so that you can read them when you like, print them and then enjoy some easy cooking whenever you like.

    I love one pot cooking as not only does it save me on washing up, but it is also perfect for when you are in a rush and have limited time on your hands.

    My favourite one pot cooking time was shortly after my daughter was born. We would go out to mother and baby group and as the meet up was late morning, by the time we got home it was lunch time and we were all starving hungry.

    The easiest thing was to add tinned tomatoes, some fresh vegetables and some pasta to the pot and have a super fast pasta ragu.

    I then got more and more adventurous on one pot cooking and this is the main reason why I have over 50 one pot recipes.

    I even sneaked in a traybake dessert because everyone needs blondies in their lives 😊

    LUNCH & DINNER

    Broccoli Pasta Al Forno Recipe

    Ingredients:

    Frying Pan with removable handle

    1 Medium Broccoli

    250 g Al Forno Pasta

    500 ml Vegetable Stock

    1 Large Onion

    1 Tbsp Garlic Puree

    1 Tbsp Olive Oil

    3 Tbsp Greek Yoghurt

    200 g Cheddar Cheese

    1 Tbsp Basil

    1 Tbsp Oregano

    Salt & Pepper

    Metric - Imperial

    Instructions:

    Dice and peel the onion. Place the onion, garlic and olive oil into the frying pan and cook for a couple of minutes on a high heat until your onions have started to soften.

    Dice the broccoli into medium sized florets and add the broccoli and pasta to the frying pan. Give it a stir.

    Add to this your stock and allow the stock to come to the boil.

    When it does, reduce the heat to low and allow it to simmer (without a lid on) for a couple of minutes.

    Grate the cheese.

    Stir it and add in the rest of the ingredients.

    Remove the handle and place in the oven at 200c/400f for 5 minutes or until the cheese is bubbling.

    Serve in soup bowls.

    Notes:

    The Greek Yoghurt does a perfect job in this dish because it creates the ideal creamy sauce without having to make a homemade cheese sauce and with a lot less calories than a traditional cheese sauce. However if you want to reduce your calories further then swap Greek Yoghurt for Quark.

    One Pot Pork Roast

    Ingredients:

    Dutch Oven

    Knife Sharpener

    Medium Pork Tenderloin (Pork Shoulder)

    4 Large Carrots

    4 Medium Sweet Potatoes

    6 Medium Garlic Cloves peeled

    4 Tbp Olive Oil

    250 ml White Wine

    1 Tbsp Pork Seasoning

    1 Tbsp Mustard Powder

    1 Tsp Sage

    Salt & Pepper

    Vegetable OXO Cube

    Handful Fresh Rosemary

    Black Peppercorns optional

    Metric - Imperial

    Instructions:

    Peel the carrots and the sweet potatoes and chop them up into chip shapes.

    Place them in your one pot and cook with the fresh garlic cloves and 2tbsp of olive oil on a hot heat for 5 minutes. Keep turning them with tongs so that they don’t stick.

    Take off the heat. Season with salt, pepper and rosemary.

    Place your pork on a chopping board. Put medium sized slits into the sides and top of it.

    Rub the olive oil into the top and sides of the pork. Then rub in the pork seasoning, mustard, salt and pepper.

    Pour the white wine and the litre of stock over the vegetables and give it a stir.
