Great Authentic German recipes that are easy to make with simple ingredients. I grew up in a German community in the rural north. My mother, who was full blooded German cooked many wonderful meals for our family. After I grew up and got married (to a German) I realized that not everyone knew how to cook these recipes the old way, or as I'll refer to it, my mothers way. I really wanted to leave my kids a way to connect with their family and have a piece of my history when I am no longer here. this book was written out of love for my seven children and with the hope that one day they will wish to teach their families how to cook the food that I grew up eating. These recipes are hearty and simple. My favorite ones are Kuchen (a fruit filled pie), vooktee (a steamed bread dough with sweet sauce), and beer cheese soup. I think you will dearly love these recipes as much as I loved them growing up. Please don't miss the kneopla soup or the potato dumplings which I know will be a huge hit.

    Preface

    Although I didn’t know it at the time, the little rural town I grew up in – Rural, ND might just as well been called Little Germany, North Dakota. It was a place where you could easily get these German dishes at any downtown café. I grew up on this food, which is made all over North Dakota. But, I never knew that people, say, in Florida didn’t know what Lefse was! So here are my mother, Winifred’s easy German recipes for all of you who have missed out on German cuisine. I hope you love them as much as I do. She always said, It wasn’t comfort food, food was for comfort.

    Mostly German, with a few Scandinavian dishes thrown in from my husband’s side.

    Appetizers

    A GERMAN HOLIDAY WOULD not be complete without pickled herring.

    Marinated German-style Pickled Herring

    INGREDIENTS:

    2 fresh herrings

    Sliced onions

    2 tsp. mixed pickling spices

    2/3-cup sugar

    Directions:

    Add vinegar to make 2 cups total of vinegar and sugar

    Soak herring overnight in cold water in fridge.

    CUT INTO PIECES AND mix with onions, spices and vinegar mixture (remove red peppers from spices).

    Fish will be pickled in 2 weeks.

    Store in refrigerator.

    Marinated German-style Herring (sour cream)

    INGREDIENTS:

    24 Herring fillets

    4 cups sour cream

    1-cup vinegar

    2 tablespoons olive oil

    6 medium onions, sliced

    3 sour apples, peeled and cut in thin strips

    1-ounce peppercorns

    1-ounce bay leaves

    1/2 lemon, sliced thin

    Directions:

    Wash filets, drain, arrange in bowl. Mix all other ingredients together and pour over herring. Cover and place in refrigerator, let chill and marinade for 24 hours.

    I USED TO MAKE RECIPE and sell it to grocery stores. Welsh Rarebit can be considered as an appetizer or a TV snack for the kids; maybe not really ‘German’ but it was to me.

    Welsh Rarebit

    INGREDIENTS:

    1 lb. sharp cheddar cheese

    2 large egg yolks

    ¼ cup dark beer

    1 tbsp. Dijon mustard

    1 tsp. Worcestershire sauce

    1 pinch cayenne pepper

    Salt /Pepper to taste

    Directions:

    Preheat broiler and line a baking sheet with foil.

    In a bowl stir together cheese, egg yolks, beer, mustard,

    Worcestershire sauce and cayenne pepper.

    Place slices of bread on baking sheet and broil until lightly toasted on one side. Remove bread and turn upside down. Pour cheese over bread and broil until golden and serve immediately.

    You will need a good nonstick pan or a Lefse grill and a rolling pin made especially for Lefse would be helpful.

    It can be an investment to make - you won’t be sorry.

    This can also be a dessert.  Germans eat it anytime.

    This the best by far, I used to make Lefse and sell it at local supermarkets. Let me tell you, it is worth every penny you pay for it.  I have seen other versions without potatoes but don’t be fooled by them. This is the real German version. Butter each piece and sprinkle with sugar, enjoy.
