    Soup

    Tomato Soup

    Ingredients

    Two 15-ounce can Fire roasted tomatoes, with juice, diced

    1 cup tomato juice or tomato base vegetable juice (low sodium or no salt)

    1/2 cup heavy whipping cream or milk

    Dash of paprika

    Dash of garlic powder (optional)

    lemon juice to taste

    1/2 slice white bread, crusts removed, torn into rough 1/2-inch pieces

    Freshly ground black pepper to taste

    Salt to taste

    Garnish:

    Fresh basil leaves or fresh herb of choice, optional

    1/2 teaspoon crushed red pepper flakes, optional

    Directions

    Combine all soup ingredients except cream, in the jar of a blender. Turn blender on to low speed and slowly increase speed to maximum. Blend until soup is completely smooth, about 2-3 minutes.  Stir in cream. Season to taste with salt and pepper.  Transfer to serving bowls. Serve immediately garnished with herbs and drizzled with olive oil.

    Note:  For smoother soup, press through a fine-mesh strainer before serving.

    Chicken Corn Soup

    Ingredients

    2 cup store bought cooked (baked or grill or rotisserie chicken), cubed or shredded

    One 15 oz. can creamed corn

    One can 15 oz. chicken broth or chicken consommé

    1/2 tbsp scallions, thinly sliced

    1/2 lime, juice

    1 tablespoon soy sauce or to taste

    Salt and pepper, to taste

    Crusty Bread for serving

    Directions

    1. Place cubed chicken into serving bowl. Fill
