VEGETABLES Chapter 1
Hummus
Ingredients:
❖ 4, 15oz. cans of Garbanzo beans
❖ 1 clove garlic, for every can of beans
❖ 2 tbs. lemon juice for every can.
❖ 1 tbs. tahini for every can
❖ ½ tsp. cumin
❖ ½ tsp. honey
❖ 1 tsp. salt
❖ 1 tsp. black pepper
Preparation:
With a blender, first blend the garlic then gradually add the beans with a little bit of their water. Then add all the rest of the ingredients and blend together until smooth.
Babaganoush
Ingredients:
❖ 10 eggplants
❖ 3 garlic cloves
❖ 3 tbs. tahini
❖ 1 tbs. extra virgin olive oil
❖ 1 tbs. salt
❖ 2 tbs. lemon or lime juice
❖ 1 tsp. black pepper
❖ 2 or 3 tbs. labne if desired, not necessary
Preparation:
For the eggplants grill them and take off the skins.
Then put the 3 garlic cloves with the eggplants in a blender and blend.
Add in the tahini, lemon or lime juice, the extra virgin olive oil, salt, and black pepper. If desired add labne, but if not leave as is.
Blend all the ingredients together until smooth and serve.

Tapule
Ingredients:
❖ 10 Persian cucumbers
❖ 6 tomatoes
❖ 5 radishes
❖ 2 bunch green onion
❖ 2 bunch parsley
❖ 6 lemons
❖ 1 coffee cup of olive oil
❖ 1 bunch of mint (nana) or ½ bunch optional
❖ 1 tsp. black pepper
❖ 1 tsp. red pepper
❖ 1 tbs. salt
❖ 1 cup bulgur
Preparation:
Chop the cucumbers, tomatoes, radishes, green onion, parsley and mint.
Squeeze the juice of the lemons out with the lemon juice squeezer.
For the bulgur take 1 tea cup of bulgur and 1 tea cup of water. First you boil the water, and then add the boiled water to the bulgur which is in another pan. Once you add the water to the bulgur the bulgur is cooked!
Then go ahead and add the bulgur to the remaining ingredients and mix well.
