    INTRODUCTION

    Thank you for purchasing this book. It contains an accumulation of information I gathered from staying alone during my single days. With a basic knowledge of cooking, it was easy to make meals I had learned as a child, but I soon got tired of cooking the same routine of meals and needed to experiment with new taste and flavors.

    My interest in cooking helped and with this and years of experimentation and practice, I came up with this cookbook which has been perfected to ensure that all meals take about 30 minutes or less to prepare with minimal cleanup time.

    These recipes are very much a part of my life and they make for majority of the meals I enjoy with my partner. Each recipe requires no special utensils; they can be made with everyday appliances found in the kitchen. I also share these recipes with friends who complain about the lack of time they have between getting home from work and finding time to prepare tasty meals.

    Recipes here do not need to be followed strictly; however you can start slow and after sometime begin to vary and experiment according to your preference to create a unique personalized taste.

    I hope this book helps you and becomes your go-to for quick, tasty and satisfying recipes.

    BREAKFAST

    Tortillas Scrambled Eggs

    Serves: 2

    Preparation time: 5 minutes

    Cooking time: 5 minutes

    Ingredients:

    3 eggs

    2 tbsp salsa

    2 tbsp refried beans

    1 tablespoon of mayonnaise

    1 1/2 cups lettuce, shredded

    4 (6 inch) flour tortillas

    Directions:

    1. In a small bowl, beat the salsa and refried beans together until smooth.

    2. Coat a skillet with cooking spray and place on medium heat. Beat the eggs briefly and pour into the skillet.

    3. Let the eggs cook for minute until the bottom is set.

    4. Pour the beans and salsa on one half of the eggs. Flip the other half over to cover the mixture. Let cook until the eggs become set.

    5. Spread 1/4 tablespoon of mayonnaise on each tortilla. Divide the eggs evenly and place on each tortilla. Top with shredded lettuce then roll up. Serve!

    Spinach Mushroom Omelet

    Serves: 2

    Preparation time:  15 minutes

    Cooking time: 15 minutes

    Ingredients:

    1/2 teaspoon olive oil

    1/2 cup mushrooms, sliced

    1/2 cup diced fresh tomato

    1/4 teaspoon salt

    1/8 teaspoon red pepper flakes

    1/8 teaspoon garlic powder

    1/8 teaspoon ground nutmeg

    1/8 teaspoon ground black pepper

    1 egg

    3 egg whites

    1 cup fresh spinach, torn

    1 tablespoon grated Parmesan cheese

    1 tablespoon reduced-fat Cheddar cheese, shredded

    2 tablespoons finely chopped red bell pepper

    Directions:

    1. With a small bowl, beat in egg and the egg whites.

    2. Add the cheddar cheese, parmesan cheese, salt, pepper, red pepper flakes, nutmeg and the garlic powder.

    3. In a large skillet, add oil and heat oil over medium temperature, for about 5 minutes, cook and stir mushrooms, green onion, and bell pepper until tender.

    4. Place the spinach in the skillet and cook until wilted slightly. Add the diced tomato and the egg mixture and stir to mix.

    5. As eggs set, lift up edges; let the uncooked portion flow under it. Cook until the egg mixture sets, this takes about 10-15 minutes.

    6. Cut into wedges and serve.

    Feta Cheese Egyptian Omelet Roll

    Serves: 2

    Preparation time: 5 minutes

    Cooking time: 5 minutes

    Ingredients:

    4 beaten eggs

    1 teaspoon milk

    1 tablespoon vegetable oil

    1/2 teaspoon black pepper

    3 tablespoons crumbled feta cheese

    Tip: Make sure pan is well greased, or else sides will stick.

    Directions:

    1. With a small bowl, beat eggs and pepper. With another small bowl, mix in crumbled cheese with milk.

    2. Pour in eggs, and tilt pan until bottom is evenly covered.

    3. When edges looks cooked, line the feta mix in the middle of eggs. Use a spatula to fold eggs over the cheese
