    Blueberry Cornmeal Pancakes

    Ingredients

    one cup soy milk

    a half cup water

    one cup whole wheat flour

    a half cup stone ground cornmeal

    one teaspoon baking powder

    a half teaspoon baking soda

    a quarter teaspoon salt

    one cup fresh blueberries

    two tablespoons vegetable oil

    Directions

    The oven must be at a medium degree.

    In a medium bowl combine water with soy milk.

    In another bowl, combine the cornmeal, flour, baking powder, salt and baking soda. Mix with the soy milk mixture until well combined. Fold in the blueberries and allow the batter to sit for five minutes.

    Lightly grease a griddle or skillet and put over a medium heat.

    Pour about one cup of batter into the hot skillet
