Charbels Special Fishball Recipe w/ sauce 1.

Fish meat (Tilapia or Knife Fish)

500 g Ground fish meat 2. Mixture A:

1 1/2 tbsp Salt, iodized refined 1 tsp Phosphate 1/4 cup Chilled water 3. Mixture B:

1/4 cup Carageenan 1/2 tsp TVP powder 1 tbsp Isolate 1/4 cup Qualicel 3/4 cup Chilled water 4. Mixture C:

3 tbsp washed Sugar, refined 1/4 tsp MSG ( Aji-nomoto ) 1/4 tsp Baking soda 2 tsp White pepper 2 tsp Garlic powder 1 1/2 cup Corn starch 1/4 cup Iced water 1 tsp BF blend 1/2 tsp Magic sarap 5. Procedure:

Add mixture A to the ground fish meat. Mix until translucent appearance is attained. Add mixture B . Continue mixing for 5 minutes to obtain a homogenized mixture.

Add mixture C, alternately with iced water. Form into balls and soak in cold water for 20 minutes. Put in simmering water. When balls float, continue cooking for 20 minutes. Drain and let cool before packing. Store in freezer. Deep fat fry for 2-3 minutes. Serve with sweet and sour sauce. 6. Sweet & Sour Sauce, Mix:

1/2 cup water 1/4 cup sugar 3 tbsp sukang sasa 1 tbsp cornstarch 1/2 tsp refined salt 2 tbsp vegetable or corn oil 3 tbsp catsup 2 pcs chili pepper chopped Pour the above ingredient in a pot , stir in one direction and cook until translucent texture is obtained.
