Recipe Title:American Fruit Cake
Ingredients:
9 oz plain Ilour
1 tsp mixed spice
! tsp nutmeg
! tsp cinnamon
8 oz butter
8 oz dark brown sugar
4 beaten eggs
12 oz raisins
8 oz glace pineapple
4 oz dried apricots
6 oz glace cherries
6 oz glace ginger
4 tbsp dark rum / brandy / sherry
Method:Line and grease a cake or loaI tin. Wrap newspaper around the outside oI
the tin.
To improve, periodicallv pour brandv or sherrv into the base of the cake
Cream the butter, sugar and spices with the Ilour. Add the beaten eggs.
Mix in the dried Iruit and add the alcohol. TransIer mixture to the tin and
bake (remove the outer newspaper) at about 170C Ior 1 -2 hours
