Executive Summary
Lumina Caf is determined to be the daily go-to caf and to be an essential part of everyday life. A
cozy place where coffee enthusiasts can eat, drink, dream and relax with friends or family. With a
growing demand of excellent brewed coffee, food and service, Lumina Caf will take advantage of
its location in Capitol Hill to gain a core of repeat customers. Lumina Caf will provide its
customers with unsurpassed service, food and drinks in the area.
Our objectives for the first year of operation are to:
Be selected as the best new caf in the area within a year of opening
Stay true to our company values, which is to always make the satisfaction of our customers
the number one priority
Become a recognized name within the community known for a good reputation of serving
excellent food and coffee
Support local business and farming community through buying and partnering with local
businesses and farmers markets

Type of Furnishings: Lumina Caf will have one large communion-style table with a bench on
each side that can seat 10 people total. There will be 5 square tables scattered around the fireplace
that can accommodate 4 customers each. There will be 4 additional individual seats each with a small
side table next to the fireplace with cushiony high-back chairs. The menu will be displayed on a large
chalkboard with custom professional handwriting.

Equipment Specification:
Since the core of our business is producing coffee, we will need a reliable espresso machine. Though
it will be an expensive investment, our business relies on coffee and will require a reliable espresso
machine. After consulting with multiple coffee shop forums, we chose an espresso machine by La
Marzocco. This brand of espresso machine is considered the holy-grail among the coffee shop

community for its reliability, quality, and consistency. As a business, it is very important to have
consistency and quality so that customers will return for more. We also chose the semi-automatic
version because we will have experienced baristas that will know the nuances of using commercial
espresso machines. This machine produces 50-100 shots of espresso an hour, which will suit the
needs of our small caf. Lastly, the La Marzocco is a beautiful piece of equipment that will match
the semi industrial design of our caf.
Double Boiler: Eliminate inconsistency while also speeding things up with this double
boiler machine, capable of extracting espresso and steaming milk at the same time with very
little temperature variance.
Articulating Steam Wand: The steam wands on the GB/5 can easily be moved into
multiple directions on it's pivot base, allowing for your baristas to comfortable steam and
froth milk comfortably to their preference.
High Capacity: The GB/5 is rated to brew between 50 to 100 shots of espresso an hour,
making it capable of handling the busiest of coffee shops. It has a pre-heating system that
warms water even before it enters the coffee boiler.
Hot Water Dispenser: Make tea or hot cocoa on the fly with the GB/5's quick dispensing
hot water nozzle.

Installed PID: The GB/5 features a PID for complete temperature control, making it even
easier to customize your drinks for those customers with decisive pallets.
Cup Warmer: The top of the GB/5 functions wonderfully as a cup warmer, drawing heat
directly from the boilers to the stainless steel top, priming those latte and shot glasses for
less temperature shock.
Dual Steam Wands: We like to use these for latte art competitions around the office, but
they also serve wonderfully in busy settings where multiple drinks need to be made at once.
Saturated Groups: With brew heads connected directly to the boiler, this feature will ensure
thermal stability for every shot produced.
Direct Water Line: Once you get this machine all plumbed in, never worry about running
out of water mid-shot with automatic refilling directly from your water line.
Food Suppliers: Our primary coffee bean supplier will be Caf Vita Coffee Roasting Company,
which is a local coffee roasting company in Seattle since 1995. Caf Vita not only believes in high
quality coffee beans, but they also believe in social and environmental sustainability by procuring
coffee beans directly from farmers. To partner with a coffee roasting company that shares the same
values of Lumina Caf was a perfect match. Caf Vita also offers valuable barista training to create
the perfect cup of coffee from their coffee beans. Lastly, Caf Vita has a great reputation and since
our caf is dependent on coffee, partnering with Caf Vita will provide the confidence to run our
business smoothly.
For our signature Panini sandwiches and breakfast pastries, we will be sourcing the bread from the
Essential Baking Company. We chose this company because of its local ties and established
reputation. The Essential Baking Company is also a well-recognized name and will provide our
customers with confidence in buying a quality product. The Essential Baking Co. will also supply us
with small pastry items as well.
For our cheese, meats, vegetables for salads and sandwiches, we will source them locally from the
Cap Hill-Broadway Farmers Market. If for some reason we are unable to procure ingredients from
the farmers market, we will purchase these items from Whole Foods.
Inventory Control: Lumina caf will use a combination of a par stock system and mini-max system
for inventory control. We will monitor sales levels for individual items and then use this data to
establish a minimum threshold for each item and re-order inventory when the stock declines. We
anticipate using the mini-max system for more perishables items such as baked goods and dairy
products. We may initially use the mini-max system for coffee beans, but may convert to using a par
stock system after we establish how many beans are used during one full week of business.

Initial Food Order: The initial food order was based on several factors, such as being open for 7
days of the week, seating capacity of 34, serving food twice a day (breakfast and lunch), and
expected turnover (caf is in a high-traffic location).
