Sodium erythorbate is often used in cured meats to help maintain their colour and flavour, as well as speed
up the curing process. On store shelves, you may find this ingredient in bacon, deli meats and hot dogs.
Sodium nitrite is an important preservative used in cured meats such as bacon, hot dogs, ham and other deli
meats. Although its used only in small amounts, its important for food safety because it helps prevent
botulism, a severe type of food poisoning, by blocking the growth of harmful bacteria. It also gives cured
meats their characteristic colour and flavour

Calcium propionate is used to maintain freshness, colour, flavour and texture. At the grocery store, you may
find it in breads, buns and other bakery products to keep them fresh and soft over time, while preventing
mould growth.
Monoglycerides and diglycerides are fats used as emulsifiers, which means theyre used to help blend
ingredients that would not otherwise mix well, such as oil and water. They help give foods a smooth and
consistent texture by preventing the separation of ingredients. You can find mono- and diglycerides in foods
such as bakery products, ice cream, whipped toppings and margarine.
Azodicarbonamide (ADA) is an ingredient used in our baked goods as a dough conditioner to enhance the
strength, elasticity and tolerance of bread dough. Health Canada considers it safe and approves the addition
of ADA to flour. It is commonly used in wheat flour by Canadian flour mills.
BHT (Butylated Hydroxytoluene) is a Health Canada approved ingredient used to help prevent fats and oils
from spoiling, while preserving the foods odour, colour and flavour. It can be found in shortening, cereals
and other foods containing fats and oils.

Sorbitol is a sweetener that is less sweet than table sugar and has the benefit of containing about one-third
fewer calories. It has a sweet, cool and pleasant taste and is used in many food products including sugarfree ice creams, desserts and chewing gum. Its also found naturally in small amounts in some fruits .
