PENETAPAN KADAR VITAMIN C DARI PAPRIKA (Capsicum Annuum

L. var Grossum) SECARA VOLUMETRI DENGAN


2,6-DIKLOROFENOL INDOFENOL

ABSTRAK
Paprika merupakan sayuran yang digunakan dalam kebutuhan hidup masyarakat
sehari-hari. Cabai paprika tidak hanya digunakan untuk konsumsi rumah tangga,
tetapi juga aneka industri pengolahan, seperti industri makanan dan minuman,
industri farmasi (obat-obatan), industri kosmetik, dan industri makanan ternak.
Pemanfaatannya sebagai bahan baku industri menjadikan cabai paprika sebagai
komoditas yang bernilai ekonomi tinggi dan mempunyai peluang bisnis yang
cerah.
Sampel paprika yang digunakan, diperoleh dari swalayan Brastagi di Kota Medan
yang berasal dari daerah Jawa Barat di desa Pasirlangu, Kecamatan Cisarua,
Kabupaten Bandung Barat. Penetapan kadar vitamin C dilakukan dengan metode
volumetri dengan 2,6-diklorofenol indofenol karena larutan 2,6-diklorofenol
indofenol selektif terhadap vitamin C.
Hasil penelitian menunjukkan bahwa kadar vitamin C dari paprika hijau
(28,02 mg/100 g), paprika kuning (93,07 mg/100 g), paprika jingga (122,75
mg/100 g) dan paprika merah (140,32 mg/100 g). Secara statistika menggunakan
Software SPSS diketahui adanya perbedaan kadar vitamin C antara paprika jingga,
paprika kuning, paprika hijau dan paprika merah. Pada uji validasi metode
diperoleh persen recovery sebesar 92,96% dan RSD sebesar 0,63%.

annuum L. var Grossum) BY VOLUMETRIC WITH
2.6-DICHLOROPHENOL INDOPHENOL

ABSTRACT
Chili pepper is a vegetable that is used in the needs of people's daily
lives. Chili peppers are not only used for household consumption, but also a
variety of processing industries like industrial consumption food and beverage,
pharmaceuticals (drugs), cosmetics industry, and animal feed
industries. Utilization as industrial raw materials to make chili peppers as a
commodity of high economic value and have a clear business opportunity.
The samples of chili peppers obtained from supermarkets Brastagi in Medan city,
originating from Pasirlangu West Java village, Cisarua District, West Bandung
Regency. The determination of the level of the vitamin C was established by
volumetric method with 2,6-dichlorophenol indophenols because 2,6dichlorophenol indophenol is selective to vitamin C.
The results showed that levels of vitamin C from green chili peppers
(28.02 mg/100 g), yellow chili peppers (93.07 mg/100 g), orange chili peppers
(122.75 mg/100 g), and chili peppers (140.32 mg / 100 g). In SPSS statistical
software was used to note the difference in levels of vitamin C include orange
peppers, yellow peppers, green peppers and red peppers. In the test method
validation obtained percent recovery of 93.02% and RSD of 1.30%.
