The Food Safety Challenge Project
Objective: To develop a food safety project specific to the college living environment.
College living provides a unique opportunity to educate college students on the importance of food safety.
The project you develop must be able to be completed during the spring 2015 academic semester. The
goal of the Food Safety Challenge project is to educate and improve food safety for those living on a
college campus focusing on the following four key areas.
Wash Hands Often (Sign/ poster posted near washing sink)
Keep Raw Meat and Ready-to-Eat Foods Separate
Cook to Proper Temperatures
Refrigerate Promptly Below 40 F

Your Response:
As a Dietetic junior, I would like initiate a
Food Safety Awareness Movement
(FSAM) to educate students about the 4
key food safety areas. Food safety is a
commonly underestimated health issue
on campus. The goal of this movement is
to improve the quality of on campus
living and prevent foodborne illness
outbreak among students. I would like to
share the knowledge that I learned from
taking the Servsafe exam with other
students through fun activities and social
media. All activities will take place in
campus high traffic areas, dormitory
kitchens and local farmers market. This
movement will provide food safety tips
and free measurement tools for them to
learn how to make their food safer for
themselves and other people. Since
students are not learning about the
knowledge in a classroom setting, they
feel more comfortable to ask question
and raise their concern about food
safety.
Food Safety Awareness Movement
Food Safety posters will be
posted on the student dormitory
kitchens and elevators. Flyers will
also be distributed to students
dorm rooms and inserted to the
flyer holders in dining hall tables.

QR code with Is My Food Safe


app will be printed on all flyers
and posters.
Design a wheel of fortune with
each section labeled with colors
and free gifts. Students spin the
wheel and answer food safety
questions to win prizes like
thermometer, food safety
refrigerator magnets and water
bottle with food safety illustration.
All the questions will come from
www.homefoodsafety.org.
Food safety workshop with
cooking demonstration and food
safety interactive activities like
crossword puzzles, Glo Germ or
food safety trivia will be hold biweekly at the dormitory kitchen
and local farmers market.
Students can sign up for Food
Safety Awareness Movement
Newsletter to receive weekly
Food Safety tips. Set up an
Instagram account to interact with
students. Students who signed
up for the newsletter and posted
any FSAM related pictures with
#VTFSAM on Instagram will be
randomly selected to win a $50
cash prize.
The experience will be documented with
newsletter signup sheet, videos and
Instagram photos. Students who sign up
for the newsletter will receive an online
survey through email. The survey will
evaluate the students food safety
knowledge and receive feedback from
students.

will be used for printing paper materials,
buying materials for building the wheels
of fortune and free gifts that will be given
to the students.

In order to improve the quality of on


campus living and prevent foodborne

be used to test students knowledge on
food safety. Thermometer, food safety
magnets and water bottles with food
safety illustration will be given to
students who participate. Besides, food
safety workshop that demonstrates food
safety precaution and offers interactive
activities like crossword puzzles, food
safety trivia and Glo-Germ will be held at
dormitory kitchen and farmers market.
Students can sign up for FSAM
newsletter to receive weekly Food Safety
tips. Students who signed up and posted
any FSAM related picture with #VTFSAM
on Instagram will be randomly selected
to win a $50 cash prize. This movement
