Highlights of the second day of 9th Chandiwala Hospitality Ensemble 2010

The second day of the mega event started with a Culinary Competition
of one snack and one dessert to be made in one and half hour’s time.
This event was judged by Chef Bharat Alagh, Executive Chef, The
Hans, New Delhi, Chef Atul Sharma, Sous Chef US Embassy and Chef
Rakesh Puri, Blue Chip Hospitalities pvt. ltd, New Delhi. Twenty five
teams from IHMs across the country participated in this event.
Bar Challenge competition was next where each team made one
innovative cocktail. The judges judged them various criteria like
technique, bouquet, aroma, taste and appearance of the drink, flair with
ice and bar equipment, overall efficiency and time schedule prescribed.
This was judged Mr. Ganga Bahadur, Restaurant Manager, Hotel
Intercontinental Eros, New Delhi, Harleen Singh Rawal, F & B manager
Hotel Crowne Plaza Today, Okhla, New Delhi, Mr. Nischal Gorang
Director Cocktaila and Derinks School of Bar and Beverage
Management New Delhi. This is one of the most popular challenges
where the one can see a lot of enthusiasm in the students to master the
bartending skills. The participants were cheered and applauded by the
audience on their bartending skills. The winners of this competition were
Prince Gupta, BCIHMCT, who made his innovations with a vodka based
cocktail and named it “Prince of Vineyard”. The Runners up was Amrita
from Tuli College, Nagpur, who also made a vodka based innovative
cocktail and named “Wild Liquid”. Both presented their cocktails with
Flaring skills which was applauded by all.
The second culinary event has students who concocted one appetizer and
one dessert using the given products. The judges for this event were
Chef Rajeev Malhotra, Executive Chef Habitat World, Chef Virendra,
Executive Sous Chef Hotel Le Meridian, New. Eighteen teams
participated in this event.

Near to the end of the day the last event was another culinary
competition where students prepared Salads, Sandwiches/Canapés and
Dessert from the ingredients given in the basket. Nineteen teams
participated in this event. This event was judged by Chef Avdesh,
Executive Chef, PSK, Laxmi Nagar, Chef Subhash Rawat, Sous Chef, J
P Vasant Continental of Jay Pee Group and Mr. Jaspal Singh Johar,
National Sales Head, Cremica. All the culinary events were coordinated
by Chef Ranojit Kundu and Chef Prem Ram BCIHMCT.
