Flavouring agents

Flavoring agents are also known as flavorants. flavorants are the substance that used to give
another substance flavor. The flavor of the food can be altered by using natural or artificial
flavorants. Flavor of the food can be altered without changing the taste.

There are three types of flavorents

1) Natural flavoring substances


2) Nature identical flavoring substances
3) Artificial flavoring substances

1) Natural flavoring substances

Flavoring substances obtained from plant or animal raw materials, by physical,


microbiological or enzymatic processes. They can be either used in their natural state
or processed for human consumption.

Natural flavors are produced by extracting the flavorents natural source substance by
using solvent extraction, distillation, or using force to squeeze it out. Extracts are then
purified and then add to the food .

2) Nature identical flavoring substances

Flavoring substances that are obtained by synthesis or isolated through chemical


processes, which are chemically identical to flavoring substances naturally present in
products intended for human consumption. They cannot contain any artificial flavoring
substances.

3) Artificial flavoring substances

substances that are not found naturally ,they are produced by fractional distillation and
additional chemical manipulation of naturally occurred chemicals or from crude oil or
coal tar.

Artificial flavores are produced by mixing the naturally occurring aroma chemical
properly to produce a desired flavor. Most of the artificial flavores are the complex
mixture of naturally occurring flavoring compound.
List of flavoring agents

1) Diactyle : its odour is like buttery


Eg: butter flavoring popcorn.

2) Isoamyl acetate : its odour is banana

It is used as a flavoring agent, as a paint and lacquer solvent, nail polish, chewing
gum and in the preparation of penicillin. It is also called banana oil.

3) Benzaldehyde : bitter almond

An aldehyde produced artificially or obtained from oil of bitter almond, containing


approximately 80% of benzaldehyde; a flavoring agent used in orally administered
medicines. Flavores in artificial cherry, almond flavors. Dyes , perfumes etc

4) Ethyl propionate: fruity smell

Ice cream , cake etc.

These compounds are used to produced artificial flavors and the produced flavores are
almost identical to naturally occurring flavores.
