Abstract The research is focuses on the utilization of residues of tea (Camellia sinensis L) as a source of antioxidants.

Antioxidants are compounds that can inhibit and prevent oxidation. Content of antioxidants in tea is at its bioactive components, namely polyphenol, which optimally contained in tea leaves are young and intact. Catechin are the dominant compound of green tea polyphenol and consists of epicatechin (EC), epicatechin gallat (ECG), epigallocatechin (EGC), epigallocatechin gallat (EGCG), catechin and gallocatechin (GC). The objective of this research are, first tested the levels of polyphenols and antioxidant activity of tea waste were extracted with ethanol 30%, 50% ethanol, ethanol 70% and 90% ethanol. Second, determine the most optimum solvent for extraction of polyphenol compounds in tea waste based on the levels of polyphenols and antioxidant activity. Third, determine the levels of EGCG in tea waste, which is extracted using the solvent selected. The antioxidant activity was measured by reducing power method and the total phenolic content was measured by Folin-Ciocalteue method. Epigallocatechin gallate content was measured by HPLC. Data obtained this experiment were analyzed by Randomized Completely Block Design (RCBD) and different treatments were compared by Honestly Significant Difference Test (HSD) 5%. The research of antioxidant activity and total phenolic content consisted of 4 treatments and 6 repetitions, and as blocks were the time of analyzed. The Comparisson average levels of polyphenols and antioxidant activity between the treatment used Honestly Significant Difference test (BNJ) 5% significance level.
