Background of PARAG DAIRY, Varanasi PARAG Dairy Varanasi is actually named as Dugdh Utpadak Sahkari Sangh Ltd, Varanasi,

registered as a cooperative Society under UP Cooperative Societies Act 1965.This was established in 1947 as a Banaras Cooperative Milk Union registered under the then UP Cooperative Societies Act 1912. Its registered office is at C-30/25,30/25-A,Maldahiya,Varanasi and its Dairy plant is located at Industrial Area, Ramnagar, Chandauli Cooperative Nature This Parag Dairy is main instrument in implementing milk cooperative movement in Varanasi, Chandauli and Sant Ravi Das Nagar (Formerly Bhadohi) districts. Actually, these all the three Cities are within the jurisdiction of this Parag Dairy. In the State of U.P, milk Cooperative movement is being implemented by 3 ties system at State level, there is Pradeshik Cooperative Dairy Federation Ltd. Lucknow, a premier Cooperative Body. At district level, in 72 Districts there are registered Cooperative societies all called as Dugdh Utpadak Sahkari Sangh Ltd. (DUSS) of that district and these are members of Dugdh Utpadak Sahkari Sangh (DUSS) are associated with Pradeshik Cooperative Dairy Federation Ltd (P.C.D.F). Next comes, village level primary milk cooperative societies situated in rural areas of each district .These are associated with and are members of district level Dugdh Utpadak Sahkari Sangh (DUSS), Village level Societies are comprised of village inhabitants, who have cows or buffalows, as a member of that society. The Pradeshik Cooperative Dairy Federation Ltd (P.C.D.F) is the manufacturer of milk and milk products under the brand name PARAG. Manufacturing activities are carried out through some of big Dugdh Sanghs viz; Varanasi Lucknow, Kanpur, Allahabad, Meerut, Moradabad and Noida. These Dugdh Sanghs have Dairy Plants with manufacturing facilities of milk and milk products. The smaller Dugdh Sanghs do not have manufacturing facilities, but only procure milk from local cooperative village societies, chill it at its milk chilling plant and supply to nearest manufacturing plants of above named 7 Dugdh Sanghs under the scheme named as State Milk Grid (SMG). The Pradeshik Cooperative Dairy Federation Ltd (P.C.D.F) also supplies milk to the Mother Dairy, Delhi under the scheme named as National Milk Grid (NMG). The Varanasi, Allahabad, Lucknow, Kanpur each have state- of- art plant of 1 Lakh Litre per day capacity, and, Meerut and Noida each have 4 Lakh Litre per day capacity plant. The Pradeshik Cooperative Dairy Federation Ltd (P.C.D.F) manufacturers Agmark ghee. The butter of 100 gm and 500 gm packs are manufactured at Meerut plant only. The Pradesh Cooperative Dairy Federation Ltd (P.C.D.F) has 03, Regional Marketing Offices within the UP, and one outside State i.e., at New Delhi for marketing of products like ghee, butter etc.

Training Infrastructure: The Pradeshik Cooperative Dairy Federation Ltd (P.C.D.F) makes a conscious effort to procure milk through members of the village level cooperative societies who are well trained in providing clean and hygienic milk. The members are made aware of and motivated to contribute to milk cooperative movement. To achieve this purpose the Pradeshik Cooperative Dairy Federation Ltd (P.C.D.F) has 06 training Centres called Cooperative dairy Training and Research Institutes. These are located at:1. Their Location shows that an effort is to provide training to society members of a district to its nearest place. These Institutes have rich library, projector, other related equipments as well as qualified faculty. Activities of PARAG Dairy, Varanasi (i) Plant: It has a state- of - art dairy plant of 01 lakh litre per day milk handling capacity. The plant is divided into milk reception section, processing section, product section and milk despatch section. The plant has a well-equipped quality assurance department to have effective quality control on received milk, manufactured milk and milk products, packagings used and other things. The Dairy is very conscious of maintaining quality and consumer satisfaction. (ii) Product :-It is currently manufacturing milk (Toned, Standard, Janta and Special ) in 200 ml, 500 ml and 01 litre packs, butter ( 20 gm pack), Paneer, Mattha, Lassi, Peda and Dahi (Curd).

(iii) Milk Procurement This dairy, for its manufacturing needs, procures milk from its associated around 600 village level cooperative milk societies. The significant aspect of this system is to buy milk right from the member at its door through that village society and make weekly payment through concerned Society through rural Bank branches. The society members supply milk to the village society in morning and evening. The fat content of milk is tested by the societys secretary. Milk from societies is collected daily in the morning and evening by Dairys contracted van. Since

societies are scattered all over 3 districts, named above, 14 milk routes are formed and one vehicle is engaged on each route. Upgradation of societies is also one of the aims of the Dairy. The bulk milk coolers (BMC) of 2000 and 3000 litre capacities are being established at the societies which are able to give enough milk. Automatic milk calculation units (AMCU) have also been fitted at various societies to ensure automatic calculation of milk quantity and calculation of fat at society level. The container used to bring milk from societies is aluminium cans (40 litres) instead of iron cans from hygiene point of view. The Dairy is switching now to steel cans to increase level of hygiene and cleanliness.

Reception of Milk From the Milk received from societies at Reception Section, samples are taken for quality check. Milk is weighed and then sent to processing section for storage and chilling.

Processing Here the milk is diverted to pasteurization and milk packing, and products manufacturing. Milk is packed by sachet machines.

Despatch of Milk for Sale The packed milk and milk products are sent to Despatch Section where there are loaded on hired milk vans for transportation to city consumers through agents.

Certification of ISO As part of continual improvement and up gradation of the Dairy as well as to win confidence of consumers and at the same time to achieve international recognition, the dairy has applied for certification of ISO 22000:2005 (Food Safety Management System) and ISO 9001: 2008 (Quality Management System). The certification body has conducted 1st stage audit and the dairy is gearing up for 2nd stage audit, and, thereafter the Dairy is hopeful of getting both ISO certifications. The Dairy has a strong clean and hygienic look and their staffs are aware of ISO provisions and their role in successful implementation of ISO standards.
