Ingredients

1 kg small baby potatoes 4 tomatoes 4 green chilies paste 2 tsp red chili powder 1 tsp turmeric powder A pinch of Asafoetida 1/2 cup yogurt 1 tsp gram masala powder 1/2 tsp black pepper powder 1/2 tsp ginger paste 1/2 tsp garlic paste 1/2 cup onion paste 1/2 tsp poppy seeds 1/2 tsp cumin seeds 1/2 cup milk 1 tsp fresh chopped coriander leaves 3 bay leaves 1/3 coriander seeds Salt to taste 1 cup vegetable oil Method Peel and cut potatoes and wash them. Heat oil in a large pan, Add potatoes for f rying. Fry for 5-8 minutes till potatoes golden brown in color. Drain potatoes a nd keep set aside. In a same oil, add cumin seeds, coriander seeds, poppy seeds, bay leaves, ginger paste, garlic paste and saute for 2-3 minutes. Add red chili powder, turmeric p owder, salt, chopped tomatoes, onion paste, yogurt, green chili paste, and black pepper powder. cook for 5 minutes on a low flame. Cook masala until oil start t o separate . Now add fried Aloo, asafoetida, gram masala powder, milk and 1/2 cup of water. C ook till gravy is dry and Aloo (potato) is completely soft. Add chopped coriander leaves and cook (Dum) another 1-2 minutes on a very low fl ame and remove from heat. Delicious Dum Aloo is ready to serve. Serve hot with chapati or rice.
