Mistura I like it!

Mistura is the most important gastronomy fair in Latin America, and Peruvians see it as a great cultural fiesta, where people from all walks of life come together to celebrate their culinary traditions and the countrys amazing biodiversity, and so reaffirm their identity as a nation. It is about ten tasty and colorful days during which Peruvian tradition is celebrated to the rhythm of bands and dances from all over Peru, in the true fashion of the grand folk customs fiestas. Perus most delicious foods open the way among the guests in a perfect communion with the party atmosphere. This is the spirit of Mistura. The different actors in the gastronomy chain come together here: market garden farmers, cooks, bakers, street food vendors, sweet vendors, waiters, restaurants, culinary institutes, patrons, and many more, to honor Perus biodiversity, one of the richest on the planet. None of this would exist were it not for the hard work of our brother peasant farmers, zealous guardians and lovers of Mother Earth, Pachamama, and who over time have learned to understand the climate and geography of their environment which has enabled them to deliver a variety of products that Mistura today brings together at the Grand Market. An addition to this effort is the generous contribution of the different styles of cooking from the different regions of Peru, as well as from the European, Arab, Chinese, Japanese and African cuisines, which have nourished Perus gastronomy to make it one of the most varied in the world, and of which Peruvians feel justly proud. It is also worth pointing out, however, that Mistura would not be what it is today if it were not for the visitors who come every year to the fair. And that is because Mistura belongs to everyone. It is us and what we are. And so now in 2012, picking up on what people have expressed, Mistura changes its slogan and moves on from Everyone Gathered Together, to I Like It! Everyone is welcome to this grand celebration, and above all to share the values that unite us all: tolerance, commitment to the environment, and social responsibility, guidelines by which we seek to make our gastronomy the engine that drives inclusive development, cultural identity and social integration.

What is Apega?
The Peruvian Gastronomy Society was established in 2007 to bring together the principal actors in the nations gastronomy and promote sustainable development, inclusion, and our cultural identity through Peruvian cooking. Apega is made up of gastronomes, nutritionists, culinary training centers, restaurateurs, cooks, researchers, wine specialists and journalists, as well as universities. It works closely with farmers, artisan fishermen, marketplace traders, municipal governments and private companies.

Our objectives
Promote Peruvian cuisine as a basis for cultural identity and as a factor in economic development, progress and wellbeing of all Peruvians. Encourage excellence in products and protect Perus biodiversity. Promote agricultural gastronomic chains. Foster the training of new generations of professionals committed to our vision and values. Recover the value of the small producers role in the gastronomy chain and the contribution of regional cooks, small restaurants and food stalls.

Activity highlights
Organization of the annual International Gastronomy Fair of Lima, Mistura, the largest in Latin America. Participation in regional food fairs throughout Peru. Promotion of the project: Lima Gastronomy Capital of Latin America by 2021. Organization of the forum Heirs to the Cuisine in different regions of the country, encouraging the exchange between recognized cooks and cooking students. Publication of work papers and books on the development of gastronomy today, of small farming, and products in general. Campaign on the appropriate use and conservation of the countrys water resources (closed seasons for shrimp, black scallops, alerts on genetically modified seeds, etc).

The Grand Market


...a place where large and small farmers from a variety of regions of Peru come together to show their best produce from the land.
Perus rich biodiversity deserves a special scenario and what better place than the Grand Market, a place where large and small farmers from a variety of regions of Peru come together to show their best produce from the land. This year, the design of the Grand Market is inspired by the caihua flower and pays homage to Perus marvelous Andean grains. More than 250 producers from the coast, highlands and jungle will be distributed among more than 120 stands. Quinoas of different colors, kiwicha and caihua will be the talk of the whole world. But thats not all. Among a wide variety of emblematic products, there will also be native potatoes, hot peppers, and organic vegetables and fruits. In other words, a full celebration of this great culinary pantry supplied by the earth in Peru. Apega sees the Grand Market as the heart of Mistura, since it is here that we show how we work together with the farmers of emblematic produce as part of the reinforcement of the Cook and Farmer Alliance.

The Pisco and Coffee Salon


Tasting, perceiving aromas, and taking master classes to learn how to recognize the features of the different varieties of pisco grapes, and the history of Perus Pisco, is an experience that visitors to the salon will certainly enjoy. There is no doubt our visitors will find here the largest and most varied selection of Peruvian pisco, as well as our best-known cocktails, prepared by the best bartenders in the business. Also, Peruvian coffee will be showing all its virtues to the world. Mistura fans who are coffee lovers will find the choicest selection from the countrys different coffee regions. Visitors will be able to taste and to buy coffee, as well as to enjoy some of the classic ways it is prepared.

The Bread Corner


This is the favorite area among early arrivals to Mistura. It is the countrys largest bakery, where men and women bakers from all over the country come to knead and bake some 50 varieties of bread. Chuta, Tres puntas, Chapla, Wawa, and Semita are some of the artisan varieties that will be available, plus breads made with potato, aniseed, wheat, molasses, corn, cheese, and so many more varieties that will delight bread lovers. For breakfast, tea-time, or to accompany some other dish, the Bread Corner is an absolute must for Mistura fans.

The Chocolate Corner


Peruvian cacao is amazing the world and it could not be absent from Mistura. As in previous years, producers from the most important cacao regions of the country will be at Mistura to festoon the fair with their products. This year there will be representatives from the Ashaninka and Shipibo indigenous communities exhibiting the countrys best cacao of origin. Cuzco will also be present with its aromatic coffee, Chuncho, which has become a tradition at the Cuzquenian table. There will be more than 30 exhibitors, including producers and wellknown Peruvian chocolate brands, to make this corner one of the most popular at Mistura. Hot chocolate, chocolate ice cream and other delights will be among the products that Mistura guests will be able to taste. It will be impossible to stay away from it.

Our Projects
Lima Gastronomy Capital by 2021
Apega has been encouraging an important public-private initiative to consolidate Lima as the Gastronomy Capital of Latin America by 2021, the year in which Peru celebrates the bicentennial of its independence. However, in order to make Lima first class gastronomy destination it is necessary to launch an international campaign, organize gastronomy tourism routes linked with monumental and cultural attractions, and program a calendar of gastronomical activities. Additionally, we need to improve the management, quality of service and safety of foods, and consolidate Mistura as an international food fair. Among our upcoming tasks is the collaboration with the Municipality of Lima in the remodeling of the Central Market and the neighboring Chinatown. We are also launching a Lima food website and publishing a book.

Interconnecting Small Producers with Gastronomy Markets


Perus gastronomy has experienced an unprecedented growth and vitality in recent years. This boom is a valuable opportunity to promote an inclusive and sustainable development in the country, opening the way for economic inclusion of small producers of the agricultural produce that forms the basis of national cuisine. The project, led by Apega and financed by the Multilateral Investment Fund (FOMIN) of the Inter-American Development Bank (IDB), is geared to develop an information and commercialization system of the best and most outstanding products supplied by small farmers to the gastronomy market. The interventions aim is to consolidate the alliance between cooks and small farmers. It seeks to implement commercialization mechanisms such as wholesale food markets and pilot food fairs with the objective of promoting a culture of gastronomy and guaranteeing access to quality farm products for gastronomy establishments and also Peruvian families.

The Cook-Small Farmer Alliance


The above project is linked to our proposal to encourage a Cook-Small Farmer Alliance. No gastronomy or boom exists without the farmers. They are the cornerstone of this chain that is fostering social inclusion and economic development. As a result, in 2009 we signed the CookSmall Farmer Alliance with the leading agricultural guilds such as Conveagro and ANPE. As of this year, we are giving support to the initiatives and plans of organized groups of small farmers to display their products and provide advice on strategic planning. Mistura has always given special recognition to Peruvian producers, first with the Silver Aj and later with the Golden Rocoto.

The Heirs to Peruvian Cuisine


At Apega we believe in the necessity of opening up to new leaders who will take up from the current prominent figures, in order to ensure that the national gastronomy boom continues to be valid and consolidates itself as a Peruvian Cuisine brand. With this focus, the project provides a space for cooking students and develops a series of decentralized forums in which the new generations can converse with Apegas chefs and gastronomes. This project is sponsored by Alicorp Gran Cocina and to date we have developed forums in Lima, Arequipa, Huancayo, Trujillo, Chiclayo, Tarapoto and Cusco. Complementary to this project is the blog Piquemos (www.piquemos.com) which serves as a display case for discussions and debates.
