Mini Quiches

Ingredients: Pastry:
100g plain flour 50g butter 8-10 teaspoons cold water

Equipment:
large bowl scales dinner knife measuring jug teaspoon grater chopping board patty tin rolling pin cutter

Filling:
50g grated cheese 1 rasher bacon onion 100-150ml milk 1 egg Oven: 210 C Gas 7

Time: 10-15 minutes

Method:
1. Make the pastry by putting the flour into a large bowl and adding the butter in small cut up pieces. 2. Rub it together until it resembles fine breadcrumbs. 3. Add the water carefully and mix it to create a soft dough. 4. Turn it onto a floured worktop and roll out. 5. Either cut out shapes for small tins or line a larger tin with the pastry. Make the edges neat. 6. Put the case or tin into the fridge for 5 minutes, take out and prick the bottom with a fork and bake blind for around 10 minutes. 7. Fry the cut up onion and bacon, add to pastry. Sprinkle cheese on top. 8. Crack the egg into the milk and beat. Pour into the case and return to oven until the egg mixture is set. 9. Remove and place onto a cooling tray.
